🍽️ Fresh Green Pesto

Ingredients
- 40 g pine nuts
- 1 clove garlic
- 50 g basil (1 bunch)
- 10 tbsp olive oil
- 40 g parmesan (1 piece)
- sea salt
Instructions
- 1. Preheat a non-stick frying pan over medium heat.
- 2. Add the pine nuts to the hot pan.
- 3. Toast the nuts slowly while stirring constantly until they are golden brown and fragrant.
- 4. Remove the toasted pine nuts from the pan and place them on a plate.
- 5. Let the pine nuts cool down completely.
- 6. Wash the basil leaves under cold water.
- 7. Shake off excess water or gently pat them dry with a kitchen towel.
- 8. Gently pluck the basil leaves from the stems.
- 9. Peel one clove of garlic and halve it.
- 10. Place the garlic, a pinch of salt, and the cooled pine nuts into a mortar.
- 11. Crush the ingredients into a fine paste using a pestle.
- 12. Add the basil leaves to the garlic mixture in the mortar.
- 13. Grind the basil roughly with the pestle until it changes color.
- 14. Add finely grated Parmesan cheese to the mixture.
- 15. Mix everything well until it forms a homogeneous mass.
- 16. Let olive oil flow slowly and drop by drop into the mixture.
- 17. Continue stirring until the pesto has a creamy and smooth consistency.
- 18. Finally, season the pesto to taste with salt.
