  2. 2. Bring the butter to a brief boil once.
  3. 3. Skim off the rising foam with a ladle.
  4. 4. Place the egg yolk and white wine in a metal bowl.
  5. 5. Place the bowl over a pot of hot water (bain-marie).
  6. 6. Whisk the mixture until frothy with a whisk.
  7. 7. Add the warm butter to the egg mixture drop by drop.
  8. 8. Stir constantly until the sauce thickens.
  9. 9. Season the sauce with lemon juice, salt, and pepper.
