  1. 1. Wash the two lemons thoroughly under hot water.
  2. 2. Dry the lemons with a clean cloth.
  3. 3. Cut four thin slices from the lemons.
  4. 4. Set the lemon slices aside for later decoration.
  5. 5. Peel the remaining peel of the untreated lemons thinly.
  6. 6. Place the lemon peel, sugar, and wine in a pot.
  7. 7. Heat the mixture while stirring constantly until it boils.
  8. 8. Turn off the stove.
  9. 9. Let the mixture steep in the pot for five minutes.
  10. 10. Let the liquid cool down completely.
  11. 11. Strain the mixture through a fine sieve to remove the peel.
  12. 12. Squeeze the juice from the remaining lemons.
  13. 13. Whisk the egg whites until they are semi-stiff.
  14. 14. Add the lemon juice to the cooled wine mixture.
  15. 15. Stir the mixture well.
  16. 16. Gently fold in the whipped egg whites.
  17. 17. Pour the mixture into a shallow metal bowl.
  18. 18. Place the bowl in the freezer for about four hours.
  19. 19. Stir the mixture repeatedly while it freezes.
  20. 20. Distribute the sparkling wine onto four champagne flutes.
  21. 21. Scoop one ball of sorbet using an ice cream scoop.
  22. 22. Place one sorbet ball into each glass.
  23. 23. Garnish the glasses with the lemon slices set aside earlier.
  24. 24. Serve the drink immediately.
