🍽️ Sparkling Wine with Homemade Lemon Sorbet

Ingredients
- 0.4 l Sekt
- 2 lemons
- 3 lemons
- 80 g sugar
- 80 ml white wine
- 1 egg white
Instructions
- 1. Wash the two lemons thoroughly under hot water.
- 2. Dry the lemons with a clean cloth.
- 3. Cut four thin slices from the lemons.
- 4. Set the lemon slices aside for later decoration.
- 5. Peel the remaining peel of the untreated lemons thinly.
- 6. Place the lemon peel, sugar, and wine in a pot.
- 7. Heat the mixture while stirring constantly until it boils.
- 8. Turn off the stove.
- 9. Let the mixture steep in the pot for five minutes.
- 10. Let the liquid cool down completely.
- 11. Strain the mixture through a fine sieve to remove the peel.
- 12. Squeeze the juice from the remaining lemons.
- 13. Whisk the egg whites until they are semi-stiff.
- 14. Add the lemon juice to the cooled wine mixture.
- 15. Stir the mixture well.
- 16. Gently fold in the whipped egg whites.
- 17. Pour the mixture into a shallow metal bowl.
- 18. Place the bowl in the freezer for about four hours.
- 19. Stir the mixture repeatedly while it freezes.
- 20. Distribute the sparkling wine onto four champagne flutes.
- 21. Scoop one ball of sorbet using an ice cream scoop.
- 22. Place one sorbet ball into each glass.
- 23. Garnish the glasses with the lemon slices set aside earlier.
- 24. Serve the drink immediately.
