🍽️ Basic Seitan Recipe

Ingredients
- 200 g Gluten (-powder)
- 0.5 tsp dried thyme
- 1 tsp Miso (-broth)
- 4 tbsp soy sauce
- 1 tbsp tomato paste (15 g)
- 1 onion
- 3 garlic cloves
- 1 bay leaf
- 0.5 tsp salt
Instructions
- 1. Add the gluten powder, thyme, and miso broth to a bowl.
- 2. Whisk the soy sauce, tomato paste, and 200 milliliters of water in a separate container.
- 3. Pour the sauce mixture over the gluten powder and mix everything vigorously.
- 4. Knead the mixture until a smooth, homogeneous dough forms.
- 5. Divide the dough into two equal halves.
- 6. Shape each part into a round ball and set them aside briefly.
- 7. Peel the onion and the garlic.
- 8. Cut the onion into four large pieces.
- 9. Halve the garlic cloves.
- 10. Bring about 1.2 liters of water to a boil in a large pot.
- 11. Add the onion and garlic pieces, the remaining soy sauce, and the bay leaf to the boiling water.
- 12. Season the broth with salt to taste.
- 13. Carefully place the dough balls into the hot broth.
- 14. Simmer the balls gently over low heat for 30 minutes.
- 15. Remove the seitan balls from the broth.
- 16. Allow the seitan to cool completely.
