  1. 1. Add the gluten powder, thyme, and miso broth to a bowl.
  2. 2. Whisk the soy sauce, tomato paste, and 200 milliliters of water in a separate container.
  3. 3. Pour the sauce mixture over the gluten powder and mix everything vigorously.
  4. 4. Knead the mixture until a smooth, homogeneous dough forms.
  5. 5. Divide the dough into two equal halves.
  6. 6. Shape each part into a round ball and set them aside briefly.
  7. 7. Peel the onion and the garlic.
  8. 8. Cut the onion into four large pieces.
  9. 9. Halve the garlic cloves.
  10. 10. Bring about 1.2 liters of water to a boil in a large pot.
  11. 11. Add the onion and garlic pieces, the remaining soy sauce, and the bay leaf to the boiling water.
  12. 12. Season the broth with salt to taste.
  13. 13. Carefully place the dough balls into the hot broth.
  14. 14. Simmer the balls gently over low heat for 30 minutes.
  15. 15. Remove the seitan balls from the broth.
  16. 16. Allow the seitan to cool completely.
