🍽️ Silken tofu topped with spring onion, chili and mango salsa in maple-soy sauce

Ingredients
- 1 bunch spring onions
- 1 red chili pepper
- 100 g mango flesh
- 2 tbsp maple syrup (GOLDEN delicate taste; 30 g)
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 2 tbsp cashew nuts (30 g)
- 400 g silken tofu (drained)
Instructions
- 1. Clean, wash the spring onions and cut them into fine rings. Halve the chili pepper lengthwise, remove the seeds, wash and chop. Dice the mango flesh into small cubes as well.
- 2. Mix the spring onions, chili, mango, maple syrup, soy sauce, sesame oil and vinegar well together in a bowl. Roast the cashew nuts in a hot pan without fat at medium heat for 3 minutes.
- 3. Carefully slide the silken tofu out of the package onto a plate. Top with the spring onion salsa and sprinkle with cashew nuts.
