🍽️ Sole fillets with tagliatelle and cherry tomatoes

Ingredients
- 400 g Tagliatelle
- Salt
- 3 Zucchini
- 250 g Cherry tomatoes
- 4 large Sole fillets (approx. 120 g each)
- Pepper
- 3 tbsp Lemon juice
- 2 tbsp Olive oil
- 1 tbsp Butter
- 50 ml Vegetable stock
- 150 g Crème fraîche
- 1 handful Parsley
Instructions
- 1. Boil water in a pot and add salt.
- 2. Add the tagliatelle pasta to the boiling water.
- 3. Cook the pasta until al dente.
- 4. Drain the pasta.
- 5. Let the pasta drain.
- 6. Wash the zucchini.
- 7. Slice thin slices from the zucchini with a peeler.
- 8. Wash the cherry tomatoes.
- 9. Wash the sole fillets.
- 10. Dry the sole fillets with kitchen paper.
- 11. Season the sole fillets with salt.
- 12. Season the sole fillets with pepper.
- 13. Drizzle 2 tablespoons of lemon juice over the sole fillets.
- 14. Heat olive oil in a pan.
- 15. Add the cherry tomatoes to the hot pan.
- 16. Add the zucchini slices to the pan.
- 17. Fry the tomatoes and zucchini while stirring.
- 18. Fry the vegetables for 3 to 4 minutes.
- 19. Add the tagliatelle pasta to the pan.
- 20. Heat the pasta at low temperature.
- 21. Heat the pasta for 2 to 3 minutes.
- 22. Season the pasta vegetable mixture with salt.
- 23. Season the pasta vegetable mixture with pepper.
- 24. Heat butter in a coated pan.
- 25. Place the sole fillets in the hot pan.
- 26. Fry the sole fillets on one side.
- 27. Fry the sole fillets for 2 to 3 minutes.
- 28. Turn the sole fillets.
- 29. Fry the sole fillets on the other side.
- 30. Fry the sole fillets for 2 to 3 minutes.
- 31. Remove the sole fillets from the pan.
- 32. Keep the sole fillets warm.
- 33. Add vegetable stock to the pan.
- 34. Add remaining lemon juice to the pan.
- 35. Deglaze the pan with the stock.
- 36. Stir crème fraîche into the sauce.
- 37. Simmer the sauce while stirring.
- 38. Simmer the sauce for approx. 2 minutes.
- 39. Season the sauce with salt.
- 40. Season the sauce with pepper.
- 41. Place the sole fillets on plates.
- 42. Distribute the tagliatelle pasta on the plates.
- 43. Add the cherry tomatoes over the pasta.
- 44. Add the zucchini slices over the pasta.
- 45. Garnish the dish with flat-leaf parsley.
