🍽️ Aromatic Monkfish Soup with Citrus Notes

Ingredients
- 2 vegetable onions
- 2 garlic cloves
- 2 tbsp olive oil
- 2 tsp grated orange peel
- 750 ml fish stock (from the jar)
- 5 tbsp orange juice
- 3 tbsp lime juice
- 500 g monkfish fillet (or other firm fish fillet)
- 0.5 bunch parsley
- salt
- pepper
Instructions
- 1. Peel the onion and the garlic clove.
- 2. Cut the onion into thin strips.
- 3. Finely chop the garlic.
- 4. Heat the olive oil in a pot.
- 5. Sauté the onion strips and the chopped garlic in the hot oil.
- 6. Add the orange peel and the fish stock to the pot.
- 7. Bring the mixture to a boil once.
- 8. Reduce the heat to low.
- 9. Let the soup simmer for 8 minutes.
- 10. Rinse the monkfish under running water.
- 11. Pat the fish dry with a kitchen towel.
- 12. Cut the monkfish into bite-sized pieces.
- 13. Add the fish pieces to the hot soup.
- 14. Let the fish cook in the soup for 4 minutes.
- 15. Add the juice of the orange and the lime.
- 16. Season the soup with salt and pepper to taste.
- 17. Finely chop the parsley.
- 18. Sprinkle the parsley over the finished soup before serving.
