🍽️ Monkfish Wrapped in Bacon

Ingredients
- 300 g monkfish fillet (ready for kitchen)
- 4 garlic cloves
- 4 tbsp olive oil
- 6 slices bacon
- 200 g snow peas
- 2 large potatoes (waxy)
- 1 shallot
- salt
- pepper (from the mill)
- chili pods (ground)
Instructions
- 1. Bring water to a boil and add some salt.
- 2. Add the snow peas to the boiling water for a few seconds.
- 3. Remove the snow peas from the water immediately and let them drain well.
- 4. Peel the shallot.
- 5. Slice the shallot into thin rings.
- 6. Peel the potatoes.
- 7. Slice the potatoes into about half-centimeter thick rounds.
- 8. Place the potato slices in a baking dish.
- 9. Season the potatoes with salt and pepper.
- 10. Drizzle two tablespoons of oil over the potatoes.
- 11. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 12. Bake the potatoes until golden brown for about 20 minutes.
- 13. Season the monkfish lightly with pepper.
- 14. Wrap the monkfish pieces in slices of bacon.
- 15. Place the wrapped monkfish in a baking dish.
- 16. Drizzle two tablespoons of olive oil over the monkfish.
- 17. Add the peeled garlic cloves to the dish.
- 18. Turn down the oven heat to 120 degrees Celsius.
- 19. Mix the snow peas and shallot rings under the potatoes.
- 20. Place the baking dish with the monkfish into the oven.
- 21. Simmer everything for another 15 to 20 minutes.
- 22. Slice the cooked monkfish.
- 23. Season the monkfish slices with a little salt and cayenne pepper.
- 24. Serve the monkfish together with the potatoes and snow peas.
