  2. 2. Add the snow peas to the boiling water for a few seconds.
  3. 3. Remove the snow peas from the water immediately and let them drain well.
  4. 4. Peel the shallot.
  5. 5. Slice the shallot into thin rings.
  6. 6. Peel the potatoes.
  7. 7. Slice the potatoes into about half-centimeter thick rounds.
  8. 8. Place the potato slices in a baking dish.
  9. 9. Season the potatoes with salt and pepper.
  10. 10. Drizzle two tablespoons of oil over the potatoes.
  11. 11. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  12. 12. Bake the potatoes until golden brown for about 20 minutes.
  13. 13. Season the monkfish lightly with pepper.
  14. 14. Wrap the monkfish pieces in slices of bacon.
  15. 15. Place the wrapped monkfish in a baking dish.
  16. 16. Drizzle two tablespoons of olive oil over the monkfish.
  17. 17. Add the peeled garlic cloves to the dish.
  18. 18. Turn down the oven heat to 120 degrees Celsius.
  19. 19. Mix the snow peas and shallot rings under the potatoes.
  20. 20. Place the baking dish with the monkfish into the oven.
  21. 21. Simmer everything for another 15 to 20 minutes.
  22. 22. Slice the cooked monkfish.
  23. 23. Season the monkfish slices with a little salt and cayenne pepper.
  24. 24. Serve the monkfish together with the potatoes and snow peas.
