Ingredients
- 700 g Pollack fillet
- Juice of one Lemon
- 3 Stalks Leek
- 200 ml White wine
- 2 tbsp Butter
- Salt
- Pepper (from the mill)
- 1 tsp Cornstarch
- 700 g Potatoes
- Parsley (for garnishing)
Instructions
- 1. Peel the potatoes and boil them in salted water for about 25 minutes.
- 2. Divide the fish fillet into 4 portions, season with salt and pepper, and drizzle with lemon juice.
- 3. Wash and clean the leek, slice it into rings, and sweat it in hot butter in a large shallow pot. Add the wine, season with salt and pepper, and simmer for 3 minutes. Mix cornstarch with a little water until smooth, add it to the leek, and bring to a boil while stirring.
- 4. Place the fish on the vegetables and cook covered for about 5 minutes over low heat.
- 5. Drain the potatoes and plate them with the leek vegetables. Place the fish on the leek vegetables and serve garnished with parsley.
