🍽️ Pollock with Kohlrabi Cream Sauce and Bread Dumplings

Ingredients
- 12 stale rolls
- 200 ml milk
- 2 shallots
- 2 tbsp butter
- 2 tbsp freshly chopped parsley
- 2 eggs
- nutmeg
- 600 g kohlrabi
- salt
- 4 pollack fillets (kitchen-ready, 160 g each)
- pepper (from the mill)
- lemon juice
- flour (for dusting)
- 4 tbsp butter
- 1.5 tbsp flour
- 200 ml whipping cream (at least 30% fat content)
- nutmeg
- 1 tbsp freshly chopped parsley
- parsley (for garnish)
Instructions
- 1. Slice the bread rolls and place them in a bowl.
- 2. Pour lukewarm milk over the bread slices.
- 3. Peel the shallots and chop them finely.
- 4. Sauté the shallots in hot butter until translucent.
- 5. Stir in the parsley and sauté briefly.
- 6. Add the shallot mixture and the eggs to the soaked bread.
- 7. Season the mixture with salt, pepper, and nutmeg.
- 8. Mix everything gently and let the mixture rest for 30 minutes.
- 9. Peel the kohlrabi and cut it into batons.
- 10. Blanch the kohlrabi batons in boiling salted water for 4 minutes.
- 11. Remove the kohlrabi from the water and rinse it with cold water.
- 12. Let the kohlrabi drain well.
- 13. Reserve 300 milliliters of the cooking liquid.
- 14. Rinse the fish and pat it dry.
- 15. Season the fish with salt and pepper.
- 16. Drizzle the fish with a little lemon juice.
- 17. Lightly dust the fish with flour.
- 18. Preheat the oven to 100 degrees Celsius with top and bottom heat.
- 19. Melt half of the butter in a frying pan.
- 20. Fry the fish fillets for about 2 minutes on each side over medium heat.
- 21. Finish cooking the fish in the preheated oven.
- 22. Shape the bread mixture into dumplings.
- 23. Bring plenty of salted water to a boil.
- 24. Add the dumplings to the boiling water.
- 25. Cook the dumplings for about 15 minutes in gently simmering water.
- 26. Melt the remaining butter in a saucepan.
- 27. Dust the butter with flour and sauté lightly.
- 28. Deglaze the mixture with the reserved kohlrabi cooking liquid.
- 29. Whisk the sauce vigorously with a whisk to avoid lumps.
- 30. Stir the cream into the sauce.
- 31. Season the sauce with salt, pepper, and nutmeg.
- 32. Let the sauce simmer gently for 5 minutes over medium heat.
- 33. Add the kohlrabi and parsley to the sauce.
- 34. Warm the ingredients in the sauce.
- 35. Remove the bread dumplings with a slotted spoon.
- 36. Let the dumplings drain.
- 37. Plate the dumplings and kohlrabi on pre-warmed plates.
- 38. Place one piece of fish fillet on top of the dumplings.
- 39. Sprinkle the dish with parsley and serve.
