  2. 2. Pour lukewarm milk over the bread slices.
  3. 3. Peel the shallots and chop them finely.
  4. 4. Sauté the shallots in hot butter until translucent.
  5. 5. Stir in the parsley and sauté briefly.
  6. 6. Add the shallot mixture and the eggs to the soaked bread.
  7. 7. Season the mixture with salt, pepper, and nutmeg.
  8. 8. Mix everything gently and let the mixture rest for 30 minutes.
  9. 9. Peel the kohlrabi and cut it into batons.
  10. 10. Blanch the kohlrabi batons in boiling salted water for 4 minutes.
  11. 11. Remove the kohlrabi from the water and rinse it with cold water.
  12. 12. Let the kohlrabi drain well.
  13. 13. Reserve 300 milliliters of the cooking liquid.
  14. 14. Rinse the fish and pat it dry.
  15. 15. Season the fish with salt and pepper.
  16. 16. Drizzle the fish with a little lemon juice.
  17. 17. Lightly dust the fish with flour.
  18. 18. Preheat the oven to 100 degrees Celsius with top and bottom heat.
  19. 19. Melt half of the butter in a frying pan.
  20. 20. Fry the fish fillets for about 2 minutes on each side over medium heat.
  21. 21. Finish cooking the fish in the preheated oven.
  22. 22. Shape the bread mixture into dumplings.
  23. 23. Bring plenty of salted water to a boil.
  24. 24. Add the dumplings to the boiling water.
  25. 25. Cook the dumplings for about 15 minutes in gently simmering water.
  26. 26. Melt the remaining butter in a saucepan.
  27. 27. Dust the butter with flour and sauté lightly.
  28. 28. Deglaze the mixture with the reserved kohlrabi cooking liquid.
  29. 29. Whisk the sauce vigorously with a whisk to avoid lumps.
  30. 30. Stir the cream into the sauce.
  31. 31. Season the sauce with salt, pepper, and nutmeg.
  32. 32. Let the sauce simmer gently for 5 minutes over medium heat.
  33. 33. Add the kohlrabi and parsley to the sauce.
  34. 34. Warm the ingredients in the sauce.
  35. 35. Remove the bread dumplings with a slotted spoon.
  36. 36. Let the dumplings drain.
  37. 37. Plate the dumplings and kohlrabi on pre-warmed plates.
  38. 38. Place one piece of fish fillet on top of the dumplings.
  39. 39. Sprinkle the dish with parsley and serve.
