🍽️ Crispy Scotch Eggs

Ingredients
- 200 g flour
- 100 g butter
- 50 g lard (or clarified butter)
- 1 pinch salt
- 5 eggs
- 400 g sausage meat
- 1 tbsp fresh chopped thyme
- flour (for working)
- 1 tbsp flour (for dusting)
- 1 egg yolk
Instructions
- 1. Put the flour in a bowl.
- 2. Add the butter in small pieces.
- 3. Add the lard.
- 4. Season the mixture with salt.
- 5. Knead everything quickly into a smooth dough.
- 6. If necessary, add a little cold water.
- 7. Make sure the dough is pliable.
- 8. The dough should not stick to your hands anymore.
- 9. Boil the four eggs hard for about 10 minutes.
- 10. Shock the eggs with cold water.
- 11. Peel the eggs carefully.
- 12. Let the eggs cool down.
- 13. Mix the meat filling with the thyme.
- 14. Preheat the oven to 180 degrees Celsius fan-forced.
- 15. Knead the dough again on a floured surface.
- 16. Divide the dough into four equal pieces.
- 17. Roll out each piece into a circle.
- 18. The circles should be about 15 centimeters in diameter.
- 19. Brush the dough circles with beaten egg.
- 20. Lightly dust the boiled eggs with flour.
- 21. Press the meat filling around each egg.
- 22. Shape the filling with the egg into a ball.
- 23. Place the meat ball in the center of a dough circle.
- 24. Wrap the ball completely in the dough.
- 25. Seal the dough well at the edges.
- 26. Press the edges firmly.
- 27. Place the Scotch Eggs on a baking sheet lined with baking paper.
- 28. Brush the eggs with the beaten egg yolk.
- 29. Bake the Scotch Eggs in the oven for about 25 minutes.
- 30. Bake them until golden brown.
