🍳 Fluffy Scones

Ingredients
- 200 ml lukewarm buttermilk
- 20 g fresh yeast (0.5 cube)
- 0.5 tsp sugar
- 60 g melted butter
- 1 tsp grated lemon zest
- 300 g wheat flour
- 200 g spelt flour
- 1 tsp salt
- 2 tbsp finely chopped garden herbs (parsley, dill, basil...)
- 1 egg
- 1 egg yolk
- 1 tbsp milk
Instructions
- 1. Stir the yeast into the buttermilk and half a teaspoon of sugar until smooth.
- 2. Combine all remaining ingredients in a mixing bowl.
- 3. Pour in the yeast milk and knead everything with the dough hooks of an electric hand mixer until a smooth dough forms.
- 4. Continue kneading until the dough no longer sticks to the sides of the bowl.
- 5. Cover the bowl and let the dough rise in a warm place for about 45 minutes.
- 6. Knead the dough briefly on a lightly floured surface.
- 7. Divide it into 25 to 30 equal pieces.
- 8. Shape them into balls, press them slightly flat, and place them on a baking sheet lined with baking paper.
- 9. Let the scones rise covered for another 15 minutes.
- 10. Alternatively, roll the dough out to a thickness of two centimeters and cut out circles using a round cutter (about 5 to 6 centimeters in diameter).
- 11. Whisk the egg yolk with a little milk and brush the scones with it.
- 12. Bake the scones in the preheated oven at 180 degrees Celsius for about 20 minutes until golden brown.
- 13. Remove them from the oven and let them cool down.
