  1. 1. Stir the yeast into the buttermilk and half a teaspoon of sugar until smooth.
  2. 2. Combine all remaining ingredients in a mixing bowl.
  3. 3. Pour in the yeast milk and knead everything with the dough hooks of an electric hand mixer until a smooth dough forms.
  4. 4. Continue kneading until the dough no longer sticks to the sides of the bowl.
  5. 5. Cover the bowl and let the dough rise in a warm place for about 45 minutes.
  6. 6. Knead the dough briefly on a lightly floured surface.
  7. 7. Divide it into 25 to 30 equal pieces.
  8. 8. Shape them into balls, press them slightly flat, and place them on a baking sheet lined with baking paper.
  9. 9. Let the scones rise covered for another 15 minutes.
  10. 10. Alternatively, roll the dough out to a thickness of two centimeters and cut out circles using a round cutter (about 5 to 6 centimeters in diameter).
  11. 11. Whisk the egg yolk with a little milk and brush the scones with it.
  12. 12. Bake the scones in the preheated oven at 180 degrees Celsius for about 20 minutes until golden brown.
  13. 13. Remove them from the oven and let them cool down.
