Ingredients
- 50 g coarse oat flakes
- 40 g margarine (or butter)
- 1 tbsp oat flour
- 1 leek stalk
- 250 g carrots
- 1 l vegetable or chicken broth
- salt, pepper
- 125 ml whipping cream
- 50 g grated cheese
- 1 bunch parsley
Instructions
- 1. Heat the margarine in a pot.
- 2. Add the oat flakes, flour, and the peeled, finely chopped or grated vegetables.
- 3. Fry the ingredients briefly until they are lightly golden brown.
- 4. Pour in the hot broth gradually while stirring continuously.
- 5. Season the soup generously to your taste.
- 6. Let the soup simmer gently on low heat for 20 to 30 minutes.
- 7. Stir the cream into the finished soup.
- 8. Mix the grated cheese well into the soup until it has melted.
- 9. Sprinkle the finely chopped parsley over the soup.
- 10. Serve the soup hot.
