🍽️ Pork cutlets with ham and sage

Ingredients
- 8 slices pork schnitzel (approx. 80 g each)
- 8 slices Parma ham
- 8 sage leaves
- 3 tbsp butter
- 125 ml sweet wine (e.g. Marsala)
- salt
- pepper (from the mill)
- sage leaf (for garnish)
Instructions
- 1. Gently pound the pork cutlets flat using the flat side of a meat mallet.
- 2. Place one fresh sage leaf on each cutlet.
- 3. Wrap a slice of ham around the cutlet.
- 4. Secure the wrapping with a wooden toothpick if necessary.
- 5. Heat two tablespoons of butter in a frying pan.
- 6. Fry the cutlets in the hot butter.
- 7. Fry each side for about one to two minutes until golden brown.
- 8. Season the cutlets lightly with salt and pepper.
- 9. Remove the cooked cutlets from the pan and set them aside.
- 10. Deglaze the pan with Marsala wine to lift the browned bits.
- 11. Bring the sauce to a vigorous boil.
- 12. Stir in one tablespoon of cold butter into the sauce.
- 13. Use a whisk to emulsify the butter completely into the sauce.
- 14. Finally, adjust the seasoning of the sauce with salt and pepper.
- 15. Place the cutlets back into the pan briefly.
- 16. Let the cutlets heat through in the sauce.
- 17. Plate the cutlets.
- 18. Drizzle the warm sauce over the cutlets.
- 19. Garnish the dish with fresh sage leaves.
