🍽️ French-style Pork Loin with Garlic and Bay Leaves

Ingredients
- 2 garlic cloves
- 750 g pork (pork knuckle, from the leg)
- salt, pepper
- 1 tsp cinnamon
- 1 tbsp olive oil
- 3 shallots
- 2 bay leaves
- 250 ml defatted meat broth
- 1 glass brandy (optional)
Instructions
- 1. Peel the garlic cloves.
- 2. Cut the garlic into long, thin strips.
- 3. Make holes in the pork roast and insert the garlic strips.
- 4. Rub the meat with salt, pepper, and cinnamon.
- 5. Heat oil in a frying pan.
- 6. Sear the roast on all sides.
- 7. Peel the shallots.
- 8. Add the shallots to the pan and fry them briefly with the meat.
- 9. Add the bay leaves to the pan.
- 10. Pour the broth over the meat.
- 11. Add the brandy, if you wish to use it.
- 12. Cover the pan.
- 13. Simmer the roast on low heat for about 1 hour.
- 14. Remove the roast from the pan.
- 15. Slice the meat.
- 16. Let the sauce reduce slightly in the pan.
- 17. Serve the meat slices with the sauce.
