🍽️ Grilled pork neck steak with herb butter

Ingredients
- 2 shallots
- 4 garlic cloves
- 1 tbsp mustard
- 4 tbsp lemon juice
- 2 tsp lemon zest
- Tabasco
- 3 tsp thyme
- salt
- pepper (from the mill)
- 125 ml alcohol-free beer
- 720 g pork neck steak (4 steaks approx. 180 g each)
- 250 g butter
- 3 tbsp herbs (e.g. chives, parsley)
Instructions
- 1. Peel the shallots and the garlic.
- 2. Roughly chop the shallots and the garlic.
- 3. Place the chopped shallots and one clove of garlic into a blender.
- 4. Add the mustard.
- 5. Squeeze the juice of one lemon.
- 6. Grate the zest of one lemon.
- 7. Add the lemon juice and the lemon zest to the blender.
- 8. Add a few drops of Tabasco sauce.
- 9. Add one teaspoon of thyme to the blender.
- 10. Pour the beer into the blender.
- 11. Season the mixture with salt and pepper.
- 12. Blend all ingredients until smooth.
- 13. Place the steaks into the marinade.
- 14. Seal the container with the marinade.
- 15. Place the container in the refrigerator.
- 16. Let the steaks marinate for at least four hours.
- 17. Ideally, marinate the steaks overnight.
- 18. Remove the steaks from the marinade.
- 19. Pat the steaks dry with a kitchen towel.
- 20. Place the steaks on the hot grill.
- 21. Grill the steaks for six to eight minutes.
- 22. Turn the steaks once while grilling.
- 23. Grill the steaks until they are cooked through.
- 24. Take a warm bowl.
- 25. Beat the butter in the warm bowl until creamy and frothy.
- 26. Take the remaining garlic.
- 27. Take the remaining herbs.
- 28. Add the remaining garlic to the butter.
- 29. Add the remaining herbs to the butter.
- 30. Add lemon juice to the butter.
- 31. Season the butter with salt.
- 32. Stir all ingredients into the butter.
- 33. Shape the butter into a roll.
- 34. Use cling film to shape the roll.
- 35. Wrap the butter roll tightly.
- 36. Place the butter roll in the refrigerator.
- 37. Slice the butter into rounds.
- 38. Serve the slices with the meat.
