  1. 1. Preheat the oven to 160 degrees Celsius using the top and bottom heat setting.
  2. 2. Rinse the pork loin under cold water. Pat it completely dry with a kitchen towel.
  3. 3. Season the meat generously with salt and pepper.
  4. 4. Heat 2 tablespoons of oil in a frying pan. Sear the meat on all sides until it forms a golden-brown crust.
  5. 5. Place the meat on a roasting rack. Position a drip pan underneath to catch the fat.
  6. 6. Roast the meat in the preheated oven for about 30 minutes.
  7. 7. Wash the spring onions thoroughly. Trim off the dry ends and slice the onions diagonally into thin rings.
  8. 8. Peel the garlic clove and chop it finely.
  9. 9. Heat the remaining fat in the pan. Slowly sweat the spring onions, garlic, and ginger in it for 2 to 3 minutes.
  10. 10. Sprinkle turmeric and curry powder over the onion mixture. Stir briefly to toast the spices.
  11. 11. Add the honey and deglaze the pan with the white wine.
  12. 12. Let the sauce simmer for 2 to 3 minutes until it thickens slightly.
  13. 13. Finally, season the sauce to taste with salt and pepper.
  14. 14. Remove the meat from the oven. Let it rest for a few minutes to allow the juices to redistribute.
  15. 15. Slice the meat into thin pieces. Serve it together with the warm onion sauce.
