🍽️ Tender Pork Loin with Spiced Onion Sauce

Ingredients
- 1 kg Pork Loin (trimmed and ready for cooking)
- Salt
- Pepper (from the mill)
- 4 tbsp Olive Oil
- 400 g Spring Onions
- 1 Garlic Clove
- 1 tsp Freshly Grated Ginger
- 1 pinch Turmeric
- 0.5 tsp Curry Powder
- 1 tsp Honey
- 100 ml Dry White Wine
Instructions
- 1. Preheat the oven to 160 degrees Celsius using the top and bottom heat setting.
- 2. Rinse the pork loin under cold water. Pat it completely dry with a kitchen towel.
- 3. Season the meat generously with salt and pepper.
- 4. Heat 2 tablespoons of oil in a frying pan. Sear the meat on all sides until it forms a golden-brown crust.
- 5. Place the meat on a roasting rack. Position a drip pan underneath to catch the fat.
- 6. Roast the meat in the preheated oven for about 30 minutes.
- 7. Wash the spring onions thoroughly. Trim off the dry ends and slice the onions diagonally into thin rings.
- 8. Peel the garlic clove and chop it finely.
- 9. Heat the remaining fat in the pan. Slowly sweat the spring onions, garlic, and ginger in it for 2 to 3 minutes.
- 10. Sprinkle turmeric and curry powder over the onion mixture. Stir briefly to toast the spices.
- 11. Add the honey and deglaze the pan with the white wine.
- 12. Let the sauce simmer for 2 to 3 minutes until it thickens slightly.
- 13. Finally, season the sauce to taste with salt and pepper.
- 14. Remove the meat from the oven. Let it rest for a few minutes to allow the juices to redistribute.
- 15. Slice the meat into thin pieces. Serve it together with the warm onion sauce.
