  1. 1. Preheat the oven to 220 degrees Celsius with fan setting.
  2. 2. Score the rind by making strip-like cuts with a sharp knife.
  3. 3. Crush 1 teaspoon of salt, pepper, cumin, allspice berries, one clove, and marjoram into a powder using a mortar and pestle.
  4. 4. Rub the meat thoroughly with the spice mixture.
  5. 5. Grease the bottom of a roasting pan or pot with the oil.
  6. 6. Place the roast in the pan with the rind facing upwards.
  7. 7. Put the pan in the oven and roast the meat for 20 to 30 minutes.
  8. 8. Pour the meat broth and some beer over the roast.
  9. 9. Reduce the oven temperature to 180 degrees Celsius.
  10. 10. Peel the onions and cut them in half.
  11. 11. Wash the pears and cut them in half as well.
  12. 12. Let the roast simmer in the oven for another 1.5 hours.
  13. 13. Add more beer as needed during the cooking time.
  14. 14. Increase the temperature to 220 degrees Celsius at the end of the cooking time to form a crispy crust.
  15. 15. Finally, season the sauce with salt and pepper to taste.
  16. 16. Arrange the roast on a platter and serve it.
  17. 17. Serve the sauce separately.
