🍽️ Crispy Pork Roast with Pears

Ingredients
- 1.2 kg pork belly
- salt
- 1 tsp peppercorns
- 0.5 tsp allspice berries
- 1 clove
- 1 tsp dried marjoram
- 1 tbsp cumin
- 4 onions
- 4 pears
- 1 tbsp vegetable oil
- 250 ml meat broth
- 500 ml dark beer
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan setting.
- 2. Score the rind by making strip-like cuts with a sharp knife.
- 3. Crush 1 teaspoon of salt, pepper, cumin, allspice berries, one clove, and marjoram into a powder using a mortar and pestle.
- 4. Rub the meat thoroughly with the spice mixture.
- 5. Grease the bottom of a roasting pan or pot with the oil.
- 6. Place the roast in the pan with the rind facing upwards.
- 7. Put the pan in the oven and roast the meat for 20 to 30 minutes.
- 8. Pour the meat broth and some beer over the roast.
- 9. Reduce the oven temperature to 180 degrees Celsius.
- 10. Peel the onions and cut them in half.
- 11. Wash the pears and cut them in half as well.
- 12. Let the roast simmer in the oven for another 1.5 hours.
- 13. Add more beer as needed during the cooking time.
- 14. Increase the temperature to 220 degrees Celsius at the end of the cooking time to form a crispy crust.
- 15. Finally, season the sauce with salt and pepper to taste.
- 16. Arrange the roast on a platter and serve it.
- 17. Serve the sauce separately.
