  1. 1. Preheat the oven to 200 degrees.
  2. 2. Finely chop 1 teaspoon of fresh rosemary needles and three garlic cloves.
  3. 3. Place the chopped vegetables into a small bowl.
  4. 4. Grate the peel from one lemon.
  5. 5. Add the lemon peel, 1 teaspoon of fennel seeds, 1 pinch of ground cloves, salt, and pepper to the bowl.
  6. 6. Thoroughly mix all spices and herbs together.
  7. 7. Poke the meat several times all around with a sharp knife to a depth of about 1 cm.
  8. 8. Fill each small hole with 1 pinch of the spice mixture.
  9. 9. Salt and pepper the roast on the outside.
  10. 10. Distribute the remaining rosemary sprigs on the meat.
  11. 11. Tie the roast tightly like a rolled roast.
  12. 12. Place the pork roast in a greased roasting pan.
  13. 13. Cook the meat in the preheated oven (200 degrees) for approx. 30 minutes.
  14. 14. Reduce the oven temperature to 170 degrees.
  15. 15. Pour 1 cup of water with 1 teaspoon of salt over the meat.
  16. 16. Finish cooking the roast for approx. 1 hour.
  17. 17. Turn the roast frequently during this time.
  18. 18. Baste the meat regularly with the roasting juices.
  19. 19. Add a little more water if necessary.
