🍽️ Crispy Roast Pork Leg

Ingredients
- 1 kg pork leg, boneless (with fat layer and without rind)
- 10 cloves
- salt
- pepper (from the mill)
- 60 g breadcrumbs
- 2 tbsp soft butter
- 1 tsp freshly chopped rosemary
- 1 tbsp brown sugar
- 1 pinch cayenne pepper
Instructions
- 1. Preheat the oven to 180 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Rinse the meat briefly under running water. Then pat it completely dry with kitchen paper.
- 3. Cut a diamond pattern into the fat layer on the top side. Insert the cloves into the cuts.
- 4. Season the meat generously with salt and pepper all over.
- 5. Place the meat in a roasting pan with the fat side facing up. Pour a little water into the pan.
- 6. Place the meat in the preheated oven for about one and a half hours.
- 7. Remove the meat from the roasting pan and place it on an oven rack. Place a fat collection pan under the rack.
- 8. Remove the cloves from the crust.
- 9. Mix the breadcrumbs with the butter, rosemary, sugar, a little salt, and cayenne pepper.
- 10. Distribute the crumb mixture evenly over the fat layer of the meat.
- 11. Continue baking the meat for about one hour until the crust is golden brown.
- 12. Serve the leg warm or completely cooled down.
- 13. Serve fried potatoes as a side dish if desired.
