🍽️ Quick Pork Curry with Coconut

Ingredients
- 600 g pork tenderloin
- 3 cm ginger
- 2 garlic cloves
- 2 tbsp vegetable oil
- 2 tbsp red curry paste
- 1 tsp ground turmeric
- 400 ml coconut milk
- 1 tbsp fish sauce
- 2 kaffir lime leaves
- 1 tsp brown sugar
- 1 handful Thai basil
Instructions
- 1. Rinse the pork under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Slice the pork into thin pieces.
- 4. Peel the ginger root and the garlic cloves.
- 5. Cut the ginger into very fine strips.
- 6. Slice the garlic into thin pieces.
- 7. Heat the oil in a hot wok or large pan.
- 8. Stir the curry paste into the hot oil.
- 9. Sauté the paste briefly until fragrant.
- 10. Add the pork slices to the wok.
- 11. Fry the meat for 1 to 2 minutes.
- 12. Remove the meat from the wok and set it aside.
- 13. Add the garlic, ginger, and turmeric powder to the wok.
- 14. Sauté the spices briefly.
- 15. Deglaze the pan with the coconut milk.
- 16. Stir in the fish sauce, kaffir lime leaves, and sugar.
- 17. Let the sauce simmer gently for about 5 minutes.
- 18. If the sauce thickens too much, add a little water.
- 19. Add the prepared meat back into the sauce.
- 20. Let the curry cook very gently for 3 to 4 minutes.
- 21. Add the Thai basil at the very end.
- 22. Finally, adjust the seasoning of the curry with a bit of fish sauce.
- 23. Serve the curry immediately.
