  1. 1. Rinse the pork under running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Slice the pork into thin pieces.
  4. 4. Peel the ginger root and the garlic cloves.
  5. 5. Cut the ginger into very fine strips.
  6. 6. Slice the garlic into thin pieces.
  7. 7. Heat the oil in a hot wok or large pan.
  8. 8. Stir the curry paste into the hot oil.
  9. 9. Sauté the paste briefly until fragrant.
  10. 10. Add the pork slices to the wok.
  11. 11. Fry the meat for 1 to 2 minutes.
  12. 12. Remove the meat from the wok and set it aside.
  13. 13. Add the garlic, ginger, and turmeric powder to the wok.
  14. 14. Sauté the spices briefly.
  15. 15. Deglaze the pan with the coconut milk.
  16. 16. Stir in the fish sauce, kaffir lime leaves, and sugar.
  17. 17. Let the sauce simmer gently for about 5 minutes.
  18. 18. If the sauce thickens too much, add a little water.
  19. 19. Add the prepared meat back into the sauce.
  20. 20. Let the curry cook very gently for 3 to 4 minutes.
  21. 21. Add the Thai basil at the very end.
  22. 22. Finally, adjust the seasoning of the curry with a bit of fish sauce.
  23. 23. Serve the curry immediately.
