  1. 1. Rinse the meat under running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Cut the meat into uniform cubes.
  4. 4. Peel the shallots.
  5. 5. Halve the shallots.
  6. 6. Peel the garlic cloves.
  7. 7. Slice the garlic thinly.
  8. 8. Heat oil in a pot.
  9. 9. Sear the meat cubes in batches until browned.
  10. 10. Remove the browned meat from the pot.
  11. 11. Sauté the shallots briefly in the cooking fat.
  12. 12. Return the meat to the pot.
  13. 13. Deglaze the dish with cider (apple wine).
  14. 14. Cover the pot with a lid.
  15. 15. Simmer the meat on low heat for about 40 minutes.
  16. 16. Stir the dish occasionally during the cooking time.
  17. 17. Peel the apples.
  18. 18. Quarter the apples.
  19. 19. Remove the core from the apple quarters.
  20. 20. Cut the apple pieces into wedges.
  21. 21. Heat butter in a frying pan.
  22. 22. Fry the apple wedges until golden brown.
  23. 23. Add the garlic briefly to the pan and toss it.
  24. 24. Add the apples and garlic to the meat.
  25. 25. Season the dish with pepper.
  26. 26. Cook everything together for another 20 minutes.
  27. 27. Add some water if necessary.
  28. 28. Season the finished dish with honey.
  29. 29. Add lemon juice.
  30. 30. Finally season with salt and pepper.
  31. 31. Deglaze the dish with Calvados (apple brandy).
  32. 32. Add a pinch of cinnamon.
