🍽️ Tender Pork Cubes with Apples and Shallots

Ingredients
- 800 g pork (e.g. shoulder)
- 6 shallots
- 2 garlic cloves
- 4 tart apples
- 2 tbsp oil
- 2 tbsp butter
- 250 ml cider
- 1 tbsp fresh green pepper
- 4 sage leaves
- 1 tsp honey
- lemon juice
- Calvados
- salt
- pepper (from the mill)
- cinnamon (ground)
Instructions
- 1. Rinse the meat under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut the meat into uniform cubes.
- 4. Peel the shallots.
- 5. Halve the shallots.
- 6. Peel the garlic cloves.
- 7. Slice the garlic thinly.
- 8. Heat oil in a pot.
- 9. Sear the meat cubes in batches until browned.
- 10. Remove the browned meat from the pot.
- 11. Sauté the shallots briefly in the cooking fat.
- 12. Return the meat to the pot.
- 13. Deglaze the dish with cider (apple wine).
- 14. Cover the pot with a lid.
- 15. Simmer the meat on low heat for about 40 minutes.
- 16. Stir the dish occasionally during the cooking time.
- 17. Peel the apples.
- 18. Quarter the apples.
- 19. Remove the core from the apple quarters.
- 20. Cut the apple pieces into wedges.
- 21. Heat butter in a frying pan.
- 22. Fry the apple wedges until golden brown.
- 23. Add the garlic briefly to the pan and toss it.
- 24. Add the apples and garlic to the meat.
- 25. Season the dish with pepper.
- 26. Cook everything together for another 20 minutes.
- 27. Add some water if necessary.
- 28. Season the finished dish with honey.
- 29. Add lemon juice.
- 30. Finally season with salt and pepper.
- 31. Deglaze the dish with Calvados (apple brandy).
- 32. Add a pinch of cinnamon.
