🍽️ Pork Fillet Rolls Wrapped in Ham with Herb Butter

Ingredients
- 1 shallot
- 1 garlic clove
- 1 handful basil
- 2 tbsp soft butter
- 20 g breadcrumbs
- salt
- pepper
- 1 pork tenderloin (approx. 750 g)
- 3 tbsp vegetable oil
- 125 ml meat broth
- 150 g Parma ham
- basil (for garnish)
Instructions
- 1. Preheat the oven to 160 degrees Celsius with top and bottom heat.
- 2. Peel the shallot and the garlic.
- 3. Finely dice the shallot and the garlic.
- 4. Rinse the basil.
- 5. Pluck the basil leaves from the stems.
- 6. Finely chop the basil leaves.
- 7. Mix the shallot and garlic cubes with the chopped basil, the butter, and the breadcrumbs.
- 8. Season the herb butter with salt and pepper.
- 9. Wash the pork fillet.
- 10. Pat the pork fillet dry with a kitchen towel.
- 11. Remove any sinews or fat edges from the pork fillet (trim).
- 12. Season the pork fillet with salt and pepper.
- 13. Heat the oil in a casserole dish.
- 14. Sear the pork fillet on all sides until browned.
- 15. Remove the pork fillet from the casserole dish.
- 16. Set the pork fillet aside.
- 17. Deglaze the pan juices in the casserole dish with the broth.
- 18. Let the broth reduce in the casserole dish for 5 minutes.
- 19. Lay out the ham slices side by side.
- 20. Align the ham slices to the length of the pork fillet.
- 21. Spread the basil-butter mixture over the ham slices.
- 22. Place the pork fillet on top of the buttered ham slices.
- 23. Roll up the pork fillet.
- 24. Place the roll with the ham ends facing down into the casserole dish.
- 25. Bake the pork fillet in the oven for approx. 30 minutes.
- 26. Remove the pork fillet from the oven.
- 27. Garnish the finished dish with fresh basil as desired.
