  1. 1. Peel the onion and the garlic.
  2. 2. Finely chop the onion and garlic.
  3. 3. Cut a pocket into the pork fillet.
  4. 4. Season the inside of the meat with salt and pepper.
  5. 5. Fill the pocket with the dried plums.
  6. 6. Tightly wrap the fillet with kitchen twine.
  7. 7. Rub the outside of the roast with salt, pepper, and curry.
  8. 8. Place the roast in a roasting pan.
  9. 9. Add the finely chopped onions to the roasting pan.
  10. 10. Add the remaining plums to the roasting pan.
  11. 11. Place the cinnamon stick in the roasting pan.
  12. 12. Pour the wine into the roasting pan.
  13. 13. Pour the broth into the roasting pan.
  14. 14. Preheat the oven to 180 degrees Celsius (top and bottom heat).
  15. 15. Braise the roast in the oven for 90 minutes.
  16. 16. Baste the roast repeatedly with the pan juices during cooking.
  17. 17. Remove the finished roast from the oven.
  18. 18. Let the roast rest for a few minutes before slicing.
  19. 19. Fish the plums out of the pan juices.
  20. 20. Set the plums aside.
  21. 21. Pour the pan juices into a saucepan.
  22. 22. Add the cream to the saucepan.
  23. 23. Reduce the sauce for 5 minutes.
  24. 24. Blend the sauce until smooth.
  25. 25. Season the sauce to taste with salt and pepper.
  26. 26. Slice the roast.
  27. 27. Plate the slices with the plums and some sauce.
  28. 28. Sprinkle the dish with parsley.
  29. 29. Serve the remaining sauce separately.
