🍽️ Juicy Pork Fillet with Plum Filling

Ingredients
- 1 small onion
- 1 clove garlic
- 1 kg pork loin
- salt
- pepper (from the mill)
- 400 g dried, soft plums
- 1 tbsp curry
- 1 cinnamon stick
- 200 ml white wine
- 200 ml meat broth
- 100 g whipping cream
- chopped parsley (for sprinkling)
Instructions
- 1. Peel the onion and the garlic.
- 2. Finely chop the onion and garlic.
- 3. Cut a pocket into the pork fillet.
- 4. Season the inside of the meat with salt and pepper.
- 5. Fill the pocket with the dried plums.
- 6. Tightly wrap the fillet with kitchen twine.
- 7. Rub the outside of the roast with salt, pepper, and curry.
- 8. Place the roast in a roasting pan.
- 9. Add the finely chopped onions to the roasting pan.
- 10. Add the remaining plums to the roasting pan.
- 11. Place the cinnamon stick in the roasting pan.
- 12. Pour the wine into the roasting pan.
- 13. Pour the broth into the roasting pan.
- 14. Preheat the oven to 180 degrees Celsius (top and bottom heat).
- 15. Braise the roast in the oven for 90 minutes.
- 16. Baste the roast repeatedly with the pan juices during cooking.
- 17. Remove the finished roast from the oven.
- 18. Let the roast rest for a few minutes before slicing.
- 19. Fish the plums out of the pan juices.
- 20. Set the plums aside.
- 21. Pour the pan juices into a saucepan.
- 22. Add the cream to the saucepan.
- 23. Reduce the sauce for 5 minutes.
- 24. Blend the sauce until smooth.
- 25. Season the sauce to taste with salt and pepper.
- 26. Slice the roast.
- 27. Plate the slices with the plums and some sauce.
- 28. Sprinkle the dish with parsley.
- 29. Serve the remaining sauce separately.
