🍽️ Tender Pork Fillet with Colorful Pepper Vegetables

Ingredients
- 600 g pork fillet
- salt
- pepper (from the mill)
- 1 clove of garlic
- 60 g ghee
- 2 onions
- 2 bell peppers
- 3 tomatoes
- 1 chili pepper
- 1 tsp paprika powder (sweet)
- 1 tsp thyme (chopped)
- 2 tsp rosemary needles (chopped)
Instructions
- 1. Wash the peppers thoroughly.
- 2. Cut the peppers in half lengthwise.
- 3. Remove the seeds and the white inner membranes.
- 4. Cut the flesh into thin strips.
- 5. Peel the onions.
- 6. Cut the onions into half rings.
- 7. Pour boiling water over the tomatoes briefly.
- 8. Remove the tomatoes from the hot water immediately.
- 9. Peel the skin off the tomatoes.
- 10. Cut the tomatoes into quarters.
- 11. Remove the seeds from the tomato quarters.
- 12. Wash the chili peppers.
- 13. Rub the pork fillet with salt, pepper, and pressed garlic.
- 14. Heat half of the ghee in a casserole dish.
- 15. Sear the meat on all sides.
- 16. Remove the meat from the casserole dish.
- 17. Set the meat aside.
- 18. Heat the remaining ghee in the same casserole dish.
- 19. Sauté the onions and pepper strips briefly.
- 20. Add the tomatoes and sauté them briefly.
- 21. Season the vegetables with salt, paprika powder, thyme, and rosemary.
- 22. Return the pork fillet to the casserole dish.
- 23. Add the chili peppers.
- 24. Cover the casserole dish.
- 25. Simmer everything on low heat for about 25 minutes until tender.
- 26. Add a little water if necessary.
- 27. Slice the fillet.
- 28. Arrange the meat on top of the vegetables.
