🍽️ Braised Pork Loin with Mozzarella Center

Ingredients
- 800 g pork loin (ready for kitchen)
- 100 g dried tomatoes (preserved in oil)
- 125 g mozzarella
- 2 handfuls mixed herbs (e.g. sage, thyme)
- pepper (from the mill)
- 7 slices bacon
- 1 tbsp olive oil
- 300 g cocktail tomatoes (on the vine)
- 2 garlic cloves
Instructions
- 1. Preheat the oven to 175 degrees Celsius using top and bottom heat.
- 2. Rinse the pork loin under cold water. Pat it completely dry with a kitchen towel.
- 3. Cut a long pocket into the meat. Slice parallel to the grain, but do not cut all the way through.
- 4. Remove the tomatoes and mozzarella from their liquid. Let them drain well.
- 5. Slice the mozzarella into thin pieces.
- 6. Rinse the fresh herbs under cold water. Pat them dry.
- 7. Pick the small leaves off the tough stems of the herbs.
- 8. Season the outside of the pork loin generously with black pepper.
- 9. Stuff the pocket in the meat with the dried tomatoes, the mozzarella slices, and some of the herbs.
- 10. Wrap the ham around the stuffed loin. Place the ham strips tightly next to each other.
- 11. Tie the loin securely with kitchen twine every five centimeters. This keeps the filling inside.
- 12. Place the remaining herbs on top of the loin as decoration.
- 13. Brush a baking dish lightly with olive oil.
- 14. Place the loin into the prepared dish.
- 15. Put the meat into the preheated oven. Bake it for 30 to 40 minutes.
