🍽️ Pork Fillet with Wok Vegetables

Ingredients
- 100 g snow peas
- 300 g bean sprouts
- salt
- 1 bunch spring onions
- 1 bell pepper
- 2 tsp ginger
- 400 g pork fillet
- 5 tbsp soy sauce
- 100 ml vegetable broth
- 1 tbsp sesame oil
- 2 tsp chili sauce
- 0.5 tsp sambal oelek
- 2 tbsp peanut oil
Instructions
- 1. Wash the snow peas thoroughly.
- 2. Remove the tough ends and stringy fibers from the snow peas.
- 3. Rinse the bean sprouts in a sieve under running water.
- 4. Let the water drain off the bean sprouts.
- 5. Bring water to a boil and add some salt.
- 6. Add the snow peas and bean sprouts to the boiling water.
- 7. Cook the vegetables for about 3 minutes.
- 8. Drain the vegetables.
- 9. Shock the vegetables immediately with cold water to stop the cooking process.
- 10. Let the cooled vegetables drain again.
- 11. Clean the spring onions.
- 12. Wash the spring onions.
- 13. Slice the spring onions into thin rings.
- 14. Wash the bell peppers.
- 15. Remove the stem and the inside of the bell peppers.
- 16. Halve the bell peppers.
- 17. Remove all white inner membranes and seeds.
- 18. Cut the bell peppers into coarse cubes.
- 19. Slice the pork fillet into strips.
- 20. Pour the soy sauce into a small bowl.
- 21. Add the vegetable broth to the soy sauce.
- 22. Add the sesame oil to the bowl.
- 23. Add the chili sauce to the bowl.
- 24. Add the Sambal Oelek to the bowl.
- 25. Whisk the sauce ingredients together well.
- 26. Set the finished sauce aside.
- 27. Heat the oil in the wok.
- 28. Fry the ginger briefly in the hot oil.
- 29. Add the meat to the wok.
- 30. Fry the meat over high heat.
- 31. Turn the meat repeatedly so it cooks evenly.
- 32. Fry the meat vigorously for 2 to 3 minutes.
- 33. Remove the meat from the wok.
- 34. Set the meat aside.
- 35. Add the bell pepper cubes to the wok.
- 36. Add the snow peas to the wok.
- 37. Add the bean sprouts to the wok.
- 38. Fry the vegetables while stirring.
- 39. Fry the vegetables for 3 minutes.
- 40. Mix the meat with the vegetables in the wok.
- 41. Pour the set-aside sauce over the meat and vegetable mixture.
- 42. Cover the wok.
- 43. Let the dish cook for another 3 minutes.
- 44. Serve the dish in small bowls.
- 45. Serve the dish.
