🍽️ Tender Pork Fillet with Creamy Apple Sauce

Ingredients
- 600 g pork fillet (trimmed)
- 1 tbsp juniper berries
- 1 bay leaf
- 2 tbsp oil
- 0.5 l apple juice
- 200 ml meat broth
- 100 ml whipping cream
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 4 thyme sprigs
- 1 apple
- 8 garlic cloves
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the pork fillet under cold water.
- 2. Pat the meat completely dry with kitchen paper.
- 3. Crush the juniper berries finely in a mortar.
- 4. Take half of the crushed berries.
- 5. Mix this half with some pepper and salt.
- 6. Rub the meat with this spice mixture.
- 7. Heat oil in a pan.
- 8. Sear the meat in the hot pan on all sides.
- 9. Remove the meat from the pan.
- 10. Preheat the oven to 100 degrees Celsius.
- 11. Place the meat on a rack.
- 12. Place the rack in the preheated oven.
- 13. Cook the meat for about 45 to 50 minutes.
- 14. Check if the meat is pink and tender inside.
- 15. Peel the apple.
- 16. Cut the apple in half.
- 17. Remove the core.
- 18. Cut the flesh into wedges.
- 19. Lightly crush the garlic cloves.
- 20. Deglaze the pan drippings in the pan with apple juice.
- 21. Add the broth.
- 22. Add the bay leaf to the pan.
- 23. Reduce the liquid by half.
- 24. Stir in the cream.
- 25. Add the remaining juniper berries.
- 26. Add the apple wedges.
- 27. Add the thyme.
- 28. Add the garlic.
- 29. Let the sauce simmer on low heat for about 5 minutes.
- 30. Season the sauce with mustard to taste.
- 31. Season the sauce with honey to taste.
- 32. Season the sauce with salt to taste.
- 33. Season the sauce with pepper to taste.
- 34. Remove the bay leaf from the sauce.
- 35. Remove the pork fillet from the oven.
- 36. Let the meat rest for a few minutes.
- 37. Slice the meat.
- 38. Serve the meat together with the juniper-apple sauce.
- 39. Serve the dish with creamy mashed potatoes if desired.
