🍽️ Pork Fillet in Bacon Wrap

Ingredients
- 600 g pork fillet
- 4 tsp tomato paste
- salt
- pepper (from the mill)
- 4 slices breakfast bacon (large)
- 2 tbsp olive oil
- 180 g polenta (instant)
- 50 g butter
- 75 g dried tomato in oil
- 0.5 bunch basil
Instructions
- 1. Cut the pork fillet into four roughly equal pieces. Spread a thin layer of tomato paste over each piece. Season everything generously with salt and pepper. Now wrap each fillet piece tightly in a slice of bacon.
- 2. Brush a small roasting pan and the wrapped fillet pieces lightly with oil. Roast the meat in the preheated oven at 200 degrees for about 15 minutes. Turn off the oven afterwards and let the meat rest inside for a short while.
- 3. In the meantime, pat the dried tomatoes dry with kitchen paper and cut them into small cubes. Wash the basil, shake it dry, and set aside a few nice leaves for garnish. Finely chop the remaining basil.
- 4. Bring 1 liter of water to a boil. Stir the polenta into the boiling water while stirring constantly. Cook it according to the instructions on the package. Remove the pot from the heat. Stir in butter, the chopped tomatoes, and the chopped basil into the polenta. Season everything to taste with salt and pepper.
- 5. Spread the finished polenta onto the plates. Place the roasted meat pieces on top. Garnish the dish with the reserved basil leaves and serve immediately.
