  4. 4. Pour the wine and broth over the quinces in the pan.
  5. 5. Cover the pan tightly with a lid.
  6. 6. Place the closed pan into a cold oven.
  7. 7. Turn the oven to 225 degrees.
  8. 8. Let the quinces simmer for about 30 minutes.
  9. 9. Peel the potatoes and wash them thoroughly.
  10. 10. Cut the potatoes into small pieces.
  11. 11. Cut the apple into quarters.
  12. 12. Remove the core from the apple.
  13. 13. Chop the apple flesh into small pieces.
  14. 14. Add the potatoes, apple, and sage leaves to the quinces.
  15. 15. Let the vegetables cook for another 30 minutes.

  17. 17. Sear the pork fillet in the hot oil on all sides.
