🍽️ Tender Pork Fillet with Flavorful Quinces and Potatoes

Ingredients
- 2 quinces
- salt
- pepper (from the mill)
- 100 ml grape juice (alternatively: white wine)
- 400 ml vegetable broth
- 700 g potatoes
- 1 tart apple
- sage leaf
- 300 g pork fillet
- 1 tsp rapeseed oil
Instructions
- 1. Peel the quinces and remove the tough core.
- 2. Cut the quince flesh into small cubes.
- 3. Season the quince cubes with a pinch of salt and pepper.
- 4. Pour the wine and broth over the quinces in the pan.
- 5. Cover the pan tightly with a lid.
- 6. Place the closed pan into a cold oven.
- 7. Turn the oven to 225 degrees.
- 8. Let the quinces simmer for about 30 minutes.
- 9. Peel the potatoes and wash them thoroughly.
- 10. Cut the potatoes into small pieces.
- 11. Cut the apple into quarters.
- 12. Remove the core from the apple.
- 13. Chop the apple flesh into small pieces.
- 14. Add the potatoes, apple, and sage leaves to the quinces.
- 15. Let the vegetables cook for another 30 minutes.
- 16. Heat oil in a separate pan.
- 17. Sear the pork fillet in the hot oil on all sides.
- 18. Season the seared meat with salt and pepper.
- 19. Place the meat on top of the cooked vegetables in the pan.
- 20. Close the oven and bake the dish for another 10 minutes at 150 degrees.
- 21. Finally, adjust the sauce with salt and pepper to taste.
- 22. Serve the finished dish on plates.
