🍽️ Oven-baked Pork Loin with Tomato and Mozzarella

Ingredients
- 750 g pork loin
- salt
- pepper (from the mill)
- olive oil
- 200 g mozzarella
- 2 tomatoes
- 20 g black olives (pitted)
- 0.5 tsp dried oregano
- basil (for garnish)
Instructions
- 1. Preheat your oven to 200 degrees Celsius fan-assisted.
- 2. Rinse the pork loin under cold running water and pat it completely dry with a kitchen towel.
- 3. Slice the meat into pieces about two centimeters thick.
- 4. Season the meat slices generously with salt and freshly ground pepper on both sides.
- 5. Heat two tablespoons of oil in a large frying pan over high heat.
- 6. Fry the meat slices in batches on each side for a short time until they have a golden-brown color.
- 7. Slice the mozzarella into thick rounds.
- 8. Wash the tomatoes and remove the hard stem area at the top.
- 9. Slice the tomatoes as well.
- 10. Slice the olives into rings.
- 11. Grease a baking dish with a little oil.
- 12. Layer the seared meat slices alternately with the tomato and mozzarella slices in the dish.
- 13. Sprinkle dried oregano and the olive rings over the dish.
- 14. Drizzle everything with a splash of olive oil.
- 15. Season the layers one last time with salt and pepper.
- 16. Place the baking dish in the preheated oven and bake the dish for about 25 minutes.
- 17. Remove the meat from the oven and garnish it with fresh basil leaves.
- 18. Serve the dish hot.
