  2. 2. Rinse the meat under cold water and pat it dry with kitchen paper.
  3. 3. Lay the meat flat.
  4. 4. Season the surface generously with salt and pepper.
  5. 5. Wash the plums thoroughly.
  6. 6. Halve the plums and remove the pits.
  7. 7. Cut half of the plums into thin strips.
  8. 8. Mix the plum strips with half of the spices.
  9. 9. Distribute this plum mixture evenly over the meat.
  10. 10. Roll the meat up tightly.
  11. 11. Secure the roll with kitchen twine at several points.
  12. 12. Season the outer side of the roll again with salt and pepper.
  13. 13. Heat the ghee (clarified butter) in a casserole dish.
  14. 14. Fry the meat roll on all sides until golden brown.
  15. 15. Remove the roll briefly from the casserole and set it aside.
  16. 16. Peel the onions.
  17. 17. Cut the onions into wedges.
  18. 18. Peel the celery.
  19. 19. Break the celery into coarse chunks.
  20. 20. Add the onions and celery to the casserole.
