🍽️ Juicy Pork Roast with Plum Filling

Ingredients
- 1 kg pork roll roast (without rind, kitchen-ready prepared)
- salt
- pepper (from the mill)
- 600 g blue plums
- 0.5 tsp ground cinnamon
- 0.5 tsp ground clove
- 1 pinch ground allspice
- 2 tbsp ghee
- 2 onions
- 0.25 celeriac
- 400 ml meat broth
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Rinse the meat under cold water and pat it dry with kitchen paper.
- 3. Lay the meat flat.
- 4. Season the surface generously with salt and pepper.
- 5. Wash the plums thoroughly.
- 6. Halve the plums and remove the pits.
- 7. Cut half of the plums into thin strips.
- 8. Mix the plum strips with half of the spices.
- 9. Distribute this plum mixture evenly over the meat.
- 10. Roll the meat up tightly.
- 11. Secure the roll with kitchen twine at several points.
- 12. Season the outer side of the roll again with salt and pepper.
- 13. Heat the ghee (clarified butter) in a casserole dish.
- 14. Fry the meat roll on all sides until golden brown.
- 15. Remove the roll briefly from the casserole and set it aside.
- 16. Peel the onions.
- 17. Cut the onions into wedges.
- 18. Peel the celery.
- 19. Break the celery into coarse chunks.
- 20. Add the onions and celery to the casserole.
- 21. Sauté the vegetables briefly.
- 22. Place the meat roll on top of the vegetables.
- 23. Pour the broth into the casserole.
- 24. Place the casserole in the preheated oven.
- 25. Braise the meat for 60 to 70 minutes.
- 26. Baste the meat with the broth repeatedly during cooking.
- 27. Add the remaining plums halfway through the cooking time.
- 28. Mix the plums with the remaining spices.
- 29. Remove the meat roll from the oven.
- 30. Remove the kitchen twine from the roll.
- 31. Slice the meat.
- 32. Arrange the meat with the fruit and vegetables on a platter.
- 33. Serve the roast hot.
