  1. 1. Carefully remove the blackcurrants from the stems.
  2. 2. Wash the berries thoroughly and let them drain well in a sieve.
  3. 3. Slice the vanilla pod lengthwise.
  4. 4. Scrape out the fine vanilla seeds from the pod using a knife.
  5. 5. Take two tablespoons of the blackcurrant juice and stir the agar-agar into it until smooth.
  6. 6. Place the remaining blackcurrants into a pot.
  7. 7. Lightly mash the berries using a potato masher.
  8. 8. Pour the remaining juice over the mashed berries.
  9. 9. Add the prepared agar-agar mixture.
  10. 10. Sprinkle the raw cane sugar over the mixture.
  11. 11. Let everything simmer gently for two minutes over low heat.
  12. 12. Remove the pot from the heat.
  13. 13. Stir the scraped vanilla seeds into the warm mixture.
  14. 14. Add the lemon juice and mix everything well.
  15. 15. Line a loaf pan with cling film.
  16. 16. Pour the blackcurrant mixture into the prepared pan.
  17. 17. Place the pan in the refrigerator for about four hours.
  18. 18. Allow the jelly to set in the pan.
  19. 19. Turn the finished jelly out onto a long platter.
  20. 20. Serve the jelly together with bread and cheese.
