🍽️ Fruit Jelly Made from Blackcurrants

Ingredients
- 750 g fresh blackcurrants
- 1 vanilla pod
- 2 heaped tsp agar-agar
- 200 ml blackcurrant juice
- 300 g whole cane sugar
- 1 tbsp lemon juice
Instructions
- 1. Carefully remove the blackcurrants from the stems.
- 2. Wash the berries thoroughly and let them drain well in a sieve.
- 3. Slice the vanilla pod lengthwise.
- 4. Scrape out the fine vanilla seeds from the pod using a knife.
- 5. Take two tablespoons of the blackcurrant juice and stir the agar-agar into it until smooth.
- 6. Place the remaining blackcurrants into a pot.
- 7. Lightly mash the berries using a potato masher.
- 8. Pour the remaining juice over the mashed berries.
- 9. Add the prepared agar-agar mixture.
- 10. Sprinkle the raw cane sugar over the mixture.
- 11. Let everything simmer gently for two minutes over low heat.
- 12. Remove the pot from the heat.
- 13. Stir the scraped vanilla seeds into the warm mixture.
- 14. Add the lemon juice and mix everything well.
- 15. Line a loaf pan with cling film.
- 16. Pour the blackcurrant mixture into the prepared pan.
- 17. Place the pan in the refrigerator for about four hours.
- 18. Allow the jelly to set in the pan.
- 19. Turn the finished jelly out onto a long platter.
- 20. Serve the jelly together with bread and cheese.
