🍰 Black and White Muffins

Ingredients
- 100 g soft butter
- 7 Medjool dates
- 100 g applesauce
- 250 g spelt flour Type 1050
- 0.5 packet baking powder
- 1 pinch salt
- 150 ml milk (1.5% fat)
- 3 tbsp cocoa powder
- 150 g cream cheese
- 1 tbsp honey
Instructions
- 1. Prepare two muffin tins with six cups each. Line the cups with paper liners or grease them with a little fat.
- 2. Place the butter in a large mixing bowl.
- 3. Beat the butter and eggs together with a mixer until creamy and fluffy.
- 4. Pit the dates.
- 5. Puree the pitted dates together with the apple sauce until smooth.
- 6. Stir the date-apple mixture into the egg-butter mixture.
- 7. Now stir in the flour, baking powder, and salt.
- 8. Pour in 125 milliliters of milk and stir until you have a smooth batter.
- 9. Divide the batter into two equal halves.
- 10. Take one half and stir in two tablespoons of cocoa powder and the remaining milk until the batter is dark.
- 11. Fill the prepared cups alternately with a little of the light batter and a little of the dark cocoa batter.
- 12. Preheat your oven. Set the temperature to 180 degrees Celsius (160 degrees Celsius for fan-assisted or gas mark 2 to 3).
- 13. Bake the muffins in the oven for about 35 minutes.
- 14. Remove the muffins from the oven and let them cool completely on a wire rack.
- 15. Meanwhile, beat the cream cheese mixture until creamy.
- 16. Add one tablespoon of cocoa powder and the honey to the cream cheese mixture.
- 17. Stir everything until you have a uniform, smooth cream.
- 18. Place the cooled muffins on a serving plate.
- 19. Fill the cream into a piping bag fitted with a star nozzle.
- 20. Pipe a little of the cream onto each muffin.
- 21. Dust the muffins with powdered sugar if desired.
- 22. Decorate the muffins with Christmas stars and serve.
