🍰 Marbled Muffins with Chocolate Topping

Ingredients
- butter (for the muffin cups)
- flour (for the muffin cups)
- 200 g flour
- 50 g ground almond kernels (peeled)
- 50 g chopped almond kernels
- 2 tsp baking powder
- 1 tsp cinnamon
- 2 eggs
- 150 g sugar
- 300 ml buttermilk
- 70 ml rapeseed oil
- 100 g dark chocolate
- 300 g dark chocolate coating
- 150 ml whipping cream
- 30 g butter
- star-shaped butter cookies
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Lightly grease the muffin cups with butter.
- 3. Lightly dust the greased cups with flour so the batter does not stick later.
- 4. Put the flour, ground almonds, chopped almonds, baking powder, and cinnamon into a large bowl.
- 5. Mix the dry ingredients in the bowl well together.
- 6. Put the eggs, sugar, buttermilk, and oil into a second bowl.
- 7. Whisk the liquid ingredients in the second bowl vigorously.
- 8. Add the dry flour mixture to the liquid mixture.
- 9. Stir everything together until a smooth batter forms.
- 10. Divide the finished batter evenly into two separate bowls.
- 11. Melt the chocolate in a water bath.
- 12. Stir the melted chocolate into half of the batter.
- 13. Spoon alternately a dollop of plain batter and a dollop of chocolate batter into the muffin cups.
- 14. Use a toothpick or spoon to swirl the batters together to create a marble effect.
- 15. Bake the muffins for about 30 minutes in the preheated oven.
- 16. Take the muffins out of the oven.
- 17. Let the muffins cool briefly in the mold.
- 18. Turn the muffins out of the mold.
- 19. Place the muffins on a wire rack.
- 20. Let the muffins cool completely on the wire rack.
- 21. Finely chop the coating chocolate.
- 22. Put the chopped chocolate into a bowl.
- 23. Heat the cream.
- 24. Pour the hot cream over the chocolate.
- 25. Stir the mixture until the chocolate has completely melted.
- 26. Add the butter in small pieces to the chocolate mixture.
- 27. Stir the butter in until it has dissolved.
- 28. Let the chocolate mixture cool briefly.
- 29. Stir the cooled mixture vigorously again.
- 30. Fill the chocolate mixture into a piping bag.
- 31. Attach a star tip to the piping bag.
- 32. Pipe a dollop of chocolate glaze onto each muffin.
- 33. Garnish the muffins with the small chocolate pieces.
- 34. Serve the finished muffins.
