  1. 1. Beat the butter, sugar, vanilla, salt, and milk together with a mixer until creamy.
  2. 2. Add the flour and knead it in quickly until a smooth dough forms.
  3. 3. Set aside three-quarters of the dough.
  4. 4. Knead cocoa into the remaining dough until it is dark brown.
  5. 5. Wrap the light and dark doughs separately in cling film.
  6. 6. Place the dough packages in the refrigerator for 1 hour.
  7. 7. Take out the light dough and roll it out into a rectangle of about 12 by 15 centimeters.
  8. 8. Take out the dark dough and roll it out into a larger sheet of about 18 by 15 centimeters.
  9. 9. Shape the remaining dark dough into a roll 15 centimeters long.
  10. 10. Brush the dark roll with egg white.
  11. 11. Place the light dough sheet on the roll and wrap it around.
  12. 12. Brush the light layer again with egg white.
  13. 13. Wrap the dark dough sheet around the roll.
  14. 14. Wrap the entire roll in cling film.
  15. 15. Place the roll in the refrigerator for 1 hour.
  16. 16. Preheat the oven to 190 degrees Celsius.
  17. 17. Slice the dough roll into thin rounds.
  18. 18. Place the slices on a baking sheet lined with baking paper.
  19. 19. Bake the cookies for about 12 minutes.
