🍽️ Plaice Rolls with Orange Butter Sauce

Ingredients
- 4 sprigs thyme
- 4 garlic cloves
- salt
- 3 tbsp lemon juice
- 640 g sole fillet (8 sole fillets)
- pepper (from the mill)
- 1 pinch cayenne pepper
- 1 pinch nutmeg
- 1 pinch ground cloves
- 2 untreated oranges
- 75 g butter
- 1 tsp sugar
- 30 ml orange liqueur
- 1 tbsp orange marmalade
- butter (for the dish)
Instructions
- 1. Wash the thyme and shake it dry.
- 2. Pluck the thyme leaves from the stems and chop them finely.
- 3. Peel the garlic.
- 4. Grind the garlic finely with a pinch of salt into a paste.
- 5. Place the garlic paste and chopped thyme leaves into a small bowl.
- 6. Add some lemon juice and mix everything well.
- 7. Let the mixture rest for a moment.
- 8. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 9. Pat the plaice fillets dry with kitchen paper.
- 10. Season the fillets with pepper, cayenne pepper, nutmeg, and ground cloves.
- 11. Spread the thyme-garlic mixture evenly over the fillets.
- 12. Roll the fillets up tightly into rolls.
- 13. Secure the rolls with wooden skewers or trussing needles.
- 14. Grease a baking dish.
- 15. Place the rolls side by side in the dish.
- 16. Squeeze one orange.
- 17. Pour the orange juice over the rolls.
- 18. Cover the dish tightly with aluminum foil.
- 19. Place the dish on the middle rack in the preheated oven.
- 20. Cook the rolls for about 15 minutes.
- 21. Wash the second orange under hot water.
- 22. Dry the orange.
- 23. Peel the skin into thin zest strips.
- 24. Slice the orange.
