🍽️ Plaice rolls with apple-onion sauce

Ingredients
- 160 g long-grain rice
- 320 g sole fillets (skinless, 4 sole fillets)
- salt
- pepper
- 4 tsp grainy mustard
- 2 stalks celery
- wooden skewers
- 1 jar (400 ml) fish stock
- 2 apples (e.g. Cox Orange)
- 1 bunch spring onions
- 1 small red chili pepper
- 2 tsp oil
- 2 tsp curry
- lime juice (from 1 lime)
- 1 tsp cornstarch
- sugar (to taste)
- 1 tbsp slivered almonds
- 1 tbsp butter
Instructions
- 1. Cook the rice according to the package instructions.
- 2. Pat the plaice fillets dry with kitchen paper.
- 3. Season the fillets with salt and pepper.
- 4. Spread the fillets thinly with mustard.
- 5. Wash the celery and cut it into very thin strips.
- 6. Distribute the celery strips across the fillets.
- 7. Roll the fillets up tightly.
- 8. Secure the rolls with wooden skewers.
- 9. Heat the fish stock in a pot.
- 10. Poach the plaice rolls in the stock for 6 to 8 minutes.
- 11. Lift the rolls out with a slotted spoon.
- 12. Keep the rolls warm.
- 13. Reduce the fish stock to half its volume.
- 14. Quarter the apples and remove the core.
- 15. Peel the apples and cut them into thin wedges.
- 16. Wash the spring onions and slice them diagonally.
- 17. Seed the chili pepper and cut it into rings.
- 18. Heat oil in a non-stick pan.
- 19. Sauté the spring onions, apples, and chili in it.
- 20. Sprinkle curry powder over them.
- 21. Deglaze with lime juice and the reduced fish stock.
- 22. Bring the sauce to a boil.
- 23. Mix the starch smoothly with one tablespoon of cold water.
- 24. Stir the starch solution into the sauce.
- 25. Bring the sauce to a boil once more.
- 26. Season the sauce with salt, pepper, and sugar.
- 27. Roast the almonds without fat in a small pan.
- 28. Remove the pan from the heat.
- 29. Let the butter melt briefly in it.

- 32. Mix the almonds into the rice.
- 33. Serve the plaice rolls with the sauce and the rice.
