🍽️ Delicate Cod Rolls with Saffron Cream

Ingredients
- 4 sole fillets
- Juice of 0,5 lemons
- salt
- pepper from the mill
- 4 tsp cream horseradish (from the jar)
- 5 sprigs tarragon
- wooden skewers
- 200 ml fish stock
- 1 small box saffron powder
- 250 ml whipping cream
- a few drops lemon juice
- 1 both red and yellow bell pepper
- 1 onion
- 1 tbsp olive oil
Instructions
- 1. Drizzle the cod fillets with lemon juice.
- 2. Season the fillets with salt and pepper.
- 3. Spread the fillets thinly with horseradish.
- 4. Rinse the tarragon and pick off the leaves.
- 5. Place the tarragon leaves on the fillets.
- 6. Roll up the fillets tightly.
- 7. Secure the rolls with wooden skewers.
- 8. Bring the fish stock to a boil.
- 9. Place the cod rolls into the boiling stock.
- 10. Simmer the rolls over low heat for about 5 minutes.
- 11. Carefully remove the rolls from the stock.
- 12. Reduce the fish stock by half.
- 13. Stir the saffron into the sauce.
- 14. Pour in the cream.
- 15. Reduce the sauce until creamy.
- 16. Season the sauce with lemon juice, salt, and pepper.
- 17. Return the rolls to the sauce.
- 18. Keep the rolls warm in the sauce.
- 19. Remove the seeds and core from the bell pepper.
- 20. Rinse the bell pepper.
- 21. Cut the bell pepper into small pieces.
- 22. Peel the onion.
- 23. Dice the onion.
- 24. Heat the oil in a pan.
- 25. Sauté the pepper and onion for 8 to 10 minutes.
- 26. Season the vegetables with salt and pepper.
- 27. Plate everything together.
- 28. Garnish with fresh tarragon if desired.
