🍽️ Plaice fillet rolls

Ingredients
- 200 g brown mushrooms
- 200 g celery stalks
- 1 clove garlic
- 1 onion
- 480 g plaice fillets (4 plaice fillets)
- salt
- pepper
- 8 fresh bay leaves
- 1 lime
- 2 tbsp olive oil
- 4 tbsp classic vegetable broth
Instructions
- 1. Clean the mushrooms thoroughly.
- 2. Cut the mushrooms into quarters or halve them, depending on their size.
- 3. Wash and clean the celery stalks.
- 4. Remove any stringy fibers from the stalk if necessary.
- 5. Slice the celery into thin rounds.
- 6. Peel the garlic clove and the onion.
- 7. Slice the garlic into thin rounds.
- 8. Finely dice the onion.
- 9. Rinse the plaice fillets under cold water.
- 10. Pat the fillets dry with a kitchen towel.
- 11. Halve the fillets lengthwise.
- 12. Season the fillets with salt and pepper.
- 13. Place one bay leaf on each fillet piece.
- 14. Roll the fillets up tightly.
- 15. Secure the rolls with toothpicks.
- 16. Rinse the lime under hot water.
- 17. Dry the lime.
- 18. Cut the lime into thin wedges.
- 19. Place the mushrooms, celery, garlic, and onion in a bowl.
- 20. Add the lime wedges.
- 21. Season the vegetable mixture with salt and pepper.
- 22. Mix everything well.
- 23. Stir the olive oil into the mixture.
- 24. Stir the vegetable broth into the mixture.
- 25. Cut two sheets of baking paper, each measuring 30 by 40 centimeters.
- 26. Distribute the vegetable mixture onto the baking paper sheets.
- 27. Place four plaice fillet rolls on the vegetables.
- 28. Tie the baking paper into a packet using kitchen twine.
- 29. Place the packets on a baking tray.
- 30. Preheat the oven to 200 degrees Celsius.
- 31. Use the fan setting if your oven has one, and set it to 180 degrees Celsius.
- 32. Use gas level 3 to 4 if you are baking with gas.
- 33. Bake the packets in the oven for 25 to 30 minutes.
- 34. Carefully open the packets.
- 35. Serve the dish immediately.
