🍽️ Plaice with Braised Cucumbers and Rice

Ingredients
- 500 g plaice fillet
- 1 unwaxed lemon
- 1 tomato
- 200 g cooked brown rice
- 0.5 l water
- 1 tbsp granulated broth
- 500 g cooking cucumber
- pepper
- 200 g whipping cream
- 3 tbsp lemon juice
- 1 egg
- 2 tbsp fresh dill
Instructions
- 1. Put the rice, water, and broth into a large pan. Let the mixture simmer on low heat for about 15 minutes.
- 2. Peel the cucumber and cut it into small cubes. Spread the cubes over the rice and season with a little pepper. Let everything cook covered for another 15 minutes. Meanwhile, whisk the cream with 2 tablespoons of lemon juice, the egg, and 1 tablespoon of finely chopped dill.
- 3. Wash the fish fillets and pat them dry. Sprinkle them with pepper and place them on top of the rice and cucumbers. Pour the cream mixture over everything and let it simmer gently on low heat for another 10 minutes.
- 4. Remove the pan from the heat. Sprinkle the dish with the remaining dill and drizzle with lemon juice. Wash the tomato and lemon, dry them, and slice them. Use the slices to garnish the fish.
