  1. 1. Rinse the plaice under running water.
  2. 2. Pat the fish completely dry with a kitchen towel.
  3. 3. Rub the plaice on both sides with salt and pepper.
  4. 4. Drizzle the fish with some lemon juice.
  5. 5. Coat the plaice in flour until covered all over.
  6. 6. Shake off any excess flour.
  7. 7. Wash the fresh herbs under cold water.
  8. 8. Pluck the fine leaves from the tough stems.
  9. 9. Chop the herbs finely.
  10. 10. Heat ghee (clarified butter) in a large frying pan.
  11. 11. Place the herbs on the skin side of the plaice.
  12. 12. Fry the fish in batches in the pan.
  13. 13. Fry each side for about 3 minutes until golden brown.
  14. 14. Cut the lemon into wedges.
  15. 15. Serve the plaice hot with the lemon wedges.
