  1. 1. Preheat your oven to 180 degrees Celsius.
  2. 2. Line a springform pan with baking paper.
  3. 3. Melt butter and chocolate together in a bain-marie (a bowl over simmering water).
  4. 4. Separate the eggs so you have distinct yolks and whites.
  5. 5. Beat the egg yolks with 50 grams of powdered sugar until creamy.
  6. 6. Mix the egg yolk mixture into the melted chocolate.
  7. 7. Gently fold in the flour and ground almonds.
  8. 8. Stir in the orange juice.
  9. 9. Beat the egg whites with the remaining powdered sugar until stiff peaks form.
  10. 10. Gently fold the egg whites into the chocolate batter.
  11. 11. Pour the batter into the prepared pan.
  12. 12. Bake the cake at 180 degrees for about 50 minutes.
  13. 13. Let the cake cool down completely in the pan.
  14. 14. Carefully release the cake from the pan.
  15. 15. Heat the topping chocolate with the double cream and liqueur in a bain-marie until melted.
  16. 16. Let the chocolate cream cool down and then beat it.
  17. 17. Place the chocolate cream in the freezer for 2 hours.
  18. 18. Spread the cooled cake thickly with the chocolate cream.
  19. 19. Keep the cake cool until serving time.
  20. 20. Garnish the cake with chocolate shavings and curls just before serving.
  21. 21. Serve the cake nice and cold.
