🍽️ Classic Chocolate Cake

Ingredients
- 350 g dark chocolate
- 150 g butter
- 6 eggs
- 170 g powdered sugar
- 25 g flour
- 50 g ground almond kernels
- 50 ml orange juice
- 300 ml double cream
- 150 g dark chocolate
- 30 ml orange liqueur
- chocolate shavings (for garnish)
Instructions
- 1. Preheat your oven to 180 degrees Celsius.
- 2. Line a springform pan with baking paper.
- 3. Melt butter and chocolate together in a bain-marie (a bowl over simmering water).
- 4. Separate the eggs so you have distinct yolks and whites.
- 5. Beat the egg yolks with 50 grams of powdered sugar until creamy.
- 6. Mix the egg yolk mixture into the melted chocolate.
- 7. Gently fold in the flour and ground almonds.
- 8. Stir in the orange juice.
- 9. Beat the egg whites with the remaining powdered sugar until stiff peaks form.
- 10. Gently fold the egg whites into the chocolate batter.
- 11. Pour the batter into the prepared pan.
- 12. Bake the cake at 180 degrees for about 50 minutes.
- 13. Let the cake cool down completely in the pan.
- 14. Carefully release the cake from the pan.
- 15. Heat the topping chocolate with the double cream and liqueur in a bain-marie until melted.
- 16. Let the chocolate cream cool down and then beat it.
- 17. Place the chocolate cream in the freezer for 2 hours.
- 18. Spread the cooled cake thickly with the chocolate cream.
- 19. Keep the cake cool until serving time.
- 20. Garnish the cake with chocolate shavings and curls just before serving.
- 21. Serve the cake nice and cold.
