🍽️ Fluffy Chocolate Soufflés

Ingredients
- soft butter (for the ramekins)
- sugar (for the ramekins)
- 50 ml milk
- 1 tsp dark cocoa powder
- 1 piece untreated orange peel
- 4 tbsp sugar
- 100 g dark chocolate (or couverture)
- 3 eggs
- salt
- 1 tbsp flour
Instructions
- 1. Turn on the oven and set it to 180 degrees Celsius with top and bottom heat.
- 2. Brush the inside of the small ramekins thinly with butter.
- 3. Coat the greased ramekins evenly with sugar.
- 4. Put the milk, cocoa powder, orange zest, and two tablespoons of sugar into a small saucepan.
- 5. Bring the milk mixture to a boil in the saucepan.
- 6. Chop the chocolate into small pieces in the meantime.
- 7. Remove the saucepan from the heat as soon as the mixture boils.
- 8. Remove the orange zest from the hot milk and discard it.
- 9. Add the chopped chocolate to the hot milk.
- 10. Let the chocolate melt in the warm milk.
- 11. Separate the eggs so that you have egg whites and egg yolks separately.
- 12. Add a pinch of salt to the egg whites.
- 13. Beat the egg whites with a pinch of salt until stiff.
- 14. Let the remaining sugar stream slowly into the stiff egg whites while you continue to beat.
- 15. Stir the egg yolks into the melted chocolate mixture.
- 16. Add the flour to the chocolate-yolk mixture and stir it in.
- 17. Gently fold the egg whites into the chocolate mixture.
- 18. Fill the prepared ramekins with the finished chocolate mixture.
- 19. Place the ramekins in a large, ovenproof dish.
- 20. Pour about two to three centimeters of hot water into the large dish.
- 21. Place the dish with the soufflés on the lower rack in the oven.
- 22. Bake the soufflés for 25 to 30 minutes.
- 23. Take the soufflés out of the oven immediately after baking.
- 24. Serve the soufflés immediately while warm.
