  2. 2. Roughly chop the rest of the chocolate block into pieces.
  3. 3. Mix the sugar with the cornstarch in a small bowl.
  4. 4. Pour five tablespoons of the milk into the sugar and cornstarch mixture.
  5. 5. Stir the mixture until smooth and free of lumps.
  6. 6. Heat the remaining milk in a pot.
  7. 7. Add the chopped chocolate to the hot milk.
  8. 8. Stir continuously until the chocolate has completely melted.
  9. 9. Bring the chocolate milk to a brief boil.
  10. 10. Remove the pot from the heat.
  11. 11. Pour the prepared sugar and cornstarch mixture into the hot chocolate milk.
  12. 12. Stir vigorously to ensure the cornstarch is evenly distributed.
  13. 13. Let the mixture boil once more briefly.
  14. 14. Remove the pot from the heat again.
  15. 15. Separate the egg so that the yolk and white are distinct.
  16. 16. Whisk the egg yolk in a small bowl.
  17. 17. Stir the whisked egg yolk into the warm chocolate mixture.
  18. 18. Beat the egg white in a clean bowl until stiff peaks form.
  19. 19. Let the chocolate mixture cool down for a few minutes.
  20. 20. Gently fold the egg whites into the cooled mixture.
  21. 21. Rinse four pudding molds with cold water.
  22. 22. Fill the pudding molds with the mixture.
  23. 23. Let the puddings cool down completely.
  24. 24. Grate the reserved piece of chocolate finely.
  25. 25. Sprinkle the finished puddings with the grated chocolate.
