  1. 1. Rinse half a lemon under hot water.
  2. 2. Pat the lemon dry with a cloth.
  3. 3. Grate a small amount of the zest finely.
  4. 4. Pour about 250 milliliters of milk into a pot.
  5. 5. Add sugar, cocoa powder, and the grated lemon zest to the milk.
  6. 6. Heat the mixture and bring it to a boil.
  7. 7. Whisk agar-agar into the remaining cold milk in a separate bowl.
  8. 8. Chop the chocolate roughly.
  9. 9. Stir the agar-agar milk mixture into the hot milk in the pot.
  10. 10. Let the mixture simmer gently for 2 to 3 minutes.
  11. 11. Remove the pot from the heat.
  12. 12. Add the chopped chocolate to the hot mixture.
  13. 13. Stir until the chocolate has completely melted.
  14. 14. Rinse four small molds with cold water.
  15. 15. Fill the chocolate mixture into the prepared molds.
  16. 16. Place the molds in the refrigerator for at least 4 hours.
  17. 17. Put the almonds into a dry pan.
  18. 18. Roast the almonds until golden brown over medium heat.
  19. 19. Remove the almonds from the pan and let them cool.
  20. 20. Turn out the cold pudding from the molds onto four plates.
  21. 21. Sprinkle the puddings with the roasted almonds.
