🍰 Creamy Chocolate Pudding with Roasted Almonds

Ingredients
- 0.5 organic lemon
- 350 ml milk (1.5% fat)
- 40 g brown sugar (2 tbsp)
- 10 g cocoa powder (1 tbsp)
- 5 g agar-agar (1 tsp)
- 60 g dark chocolate
- 20 g chopped almond kernels (2 tbsp)
Instructions
- 1. Rinse half a lemon under hot water.
- 2. Pat the lemon dry with a cloth.
- 3. Grate a small amount of the zest finely.
- 4. Pour about 250 milliliters of milk into a pot.
- 5. Add sugar, cocoa powder, and the grated lemon zest to the milk.
- 6. Heat the mixture and bring it to a boil.
- 7. Whisk agar-agar into the remaining cold milk in a separate bowl.
- 8. Chop the chocolate roughly.
- 9. Stir the agar-agar milk mixture into the hot milk in the pot.
- 10. Let the mixture simmer gently for 2 to 3 minutes.
- 11. Remove the pot from the heat.
- 12. Add the chopped chocolate to the hot mixture.
- 13. Stir until the chocolate has completely melted.
- 14. Rinse four small molds with cold water.
- 15. Fill the chocolate mixture into the prepared molds.
- 16. Place the molds in the refrigerator for at least 4 hours.
- 17. Put the almonds into a dry pan.
- 18. Roast the almonds until golden brown over medium heat.
- 19. Remove the almonds from the pan and let them cool.
- 20. Turn out the cold pudding from the molds onto four plates.
- 21. Sprinkle the puddings with the roasted almonds.
