🍽️ Crunchy Chocolate Center Cookies

Ingredients
- 120 g fine sugar
- 1 tbsp vanilla sugar
- 250 g flour
- 180 g butter
- flour (for working)
- 100 g dark chocolate
- 100 g soft butter
- 100 g sugar
- 1 egg
- 80 g ground hazelnuts
- 100 g flour
- 1 tbsp cocoa powder
- 3 tbsp amaretto liqueur or milk
- 100 g milk chocolate coating
- cocoa powder
Instructions
- 1. Mix the sugar, vanilla sugar, and flour in a bowl.
- 2. Mound the ingredients into a small pile.
- 3. Add the butter in small pieces.
- 4. Coarsely chop the butter into the flour mixture using a dough scraper.
- 5. Rub the mixture into fine crumbs.
- 6. Knead the crumbs into a smooth dough.
- 7. Shape the dough into rolls about 4 centimeters in diameter.
- 8. Wrap the rolls in plastic wrap.
- 9. Place the rolls in the refrigerator for at least 2 hours.
- 10. Finely chop the chocolate for the filling.
- 11. Beat the butter with the sugar until creamy.
- 12. Add the egg, nuts, flour, cocoa, and liqueur.
- 13. Gently fold in the chopped chocolate.
- 14. Chill the filling dough for about 1 hour.
- 15. Preheat the oven to 180 degrees Celsius fan-forced.
- 16. Line 1 to 2 baking sheets with baking paper.
- 17. Slice the base dough into rounds about 0.5 centimeters thick.
- 18. Place the slices on the baking sheets.
- 19. Bake the cookies for about 5 minutes.
- 20. Remove the baking sheets from the oven.
- 21. Pinch off small pieces of the chocolate dough.
- 22. Roll the pieces into small balls.
- 23. Press the balls onto the pre-baked cookies.
- 24. Bake the cookies for another 10 minutes.
- 25. Remove the sheets and let the cookies cool down.
- 26. Melt the couverture chocolate over a hot water bath.
- 27. Dip the cookies into the melted chocolate.
- 28. Place the cookies on a wire rack.
- 29. Let the chocolate dry for about 10 minutes.
- 30. Dust the cookies with cocoa powder.
- 31. Let the cookies set completely.
