  1. 1. Mix the sugar, vanilla sugar, and flour in a bowl.
  2. 2. Mound the ingredients into a small pile.
  3. 3. Add the butter in small pieces.
  4. 4. Coarsely chop the butter into the flour mixture using a dough scraper.
  5. 5. Rub the mixture into fine crumbs.
  6. 6. Knead the crumbs into a smooth dough.
  7. 7. Shape the dough into rolls about 4 centimeters in diameter.
  8. 8. Wrap the rolls in plastic wrap.
  9. 9. Place the rolls in the refrigerator for at least 2 hours.
  10. 10. Finely chop the chocolate for the filling.
  11. 11. Beat the butter with the sugar until creamy.
  12. 12. Add the egg, nuts, flour, cocoa, and liqueur.
  13. 13. Gently fold in the chopped chocolate.
  14. 14. Chill the filling dough for about 1 hour.
  15. 15. Preheat the oven to 180 degrees Celsius fan-forced.
  16. 16. Line 1 to 2 baking sheets with baking paper.
  17. 17. Slice the base dough into rounds about 0.5 centimeters thick.
  18. 18. Place the slices on the baking sheets.
  19. 19. Bake the cookies for about 5 minutes.
  20. 20. Remove the baking sheets from the oven.
  21. 21. Pinch off small pieces of the chocolate dough.
  22. 22. Roll the pieces into small balls.
  23. 23. Press the balls onto the pre-baked cookies.
  24. 24. Bake the cookies for another 10 minutes.
  25. 25. Remove the sheets and let the cookies cool down.
  26. 26. Melt the couverture chocolate over a hot water bath.
  27. 27. Dip the cookies into the melted chocolate.
  28. 28. Place the cookies on a wire rack.
  29. 29. Let the chocolate dry for about 10 minutes.
  30. 30. Dust the cookies with cocoa powder.
  31. 31. Let the cookies set completely.
