🍰 Moist Chocolate Muffins

Ingredients
- 75 g dark chocolate (min. 70% cocoa content)
- 100 g butter
- 100 g full cane sugar
- 200 ml milk
- 1 egg
- 100 ml sour cream
- 200 g spelt flour
- 2 tsp cornstarch
- 2 tsp baking powder
- 2 tbsp cocoa powder
- 1 pinch salt
Instructions
- 1. Chop the dark chocolate into small pieces using a knife.
- 2. Warm the butter in a pot over low heat and let it melt.
- 3. Add the chocolate pieces to the melted butter and stir until completely dissolved.
- 4. Remove the pot from the heat.
- 5. Whisk milk, egg, sour cream, and sugar with a hand mixer until the mixture is creamy.
- 6. Thoroughly mix flour, cornstarch, baking powder, cocoa, and salt in a separate bowl.
- 7. Pour the milk-egg mixture and the chocolate butter into the flour mixture.
- 8. Stir everything with a cooking spoon until a smooth and homogeneous batter forms.
- 9. Grease the cups of a muffin tin with butter and dust them lightly with flour.
- 10. Fill the batter into the prepared molds.
- 11. Preheat the oven to 180 °C (160 °C for fan-assisted or gas mark 2–3).
- 12. Bake the muffins on the middle rack for about 25 minutes.
- 13. Remove the muffins from the oven and let them cool for a moment.
- 14. Carefully release the muffins from the molds.
