  1. 1. Chop the chocolate into coarse pieces.
  2. 2. Melt the chocolate pieces in a bowl placed over a pot of hot, but not boiling, water (bain-marie).
  3. 3. Remove the bowl from the pot to stop the chocolate from melting further.
  4. 4. Separate the eggs: Put the egg yolks in one bowl and the egg whites in a separate, grease-free bowl.
  5. 5. Beat the egg whites with the sugar until they form stiff peaks.
  6. 6. Add the egg yolks and the rum to the bowl with the melted chocolate.
  7. 7. Place this bowl back over the hot water bath briefly and stir until creamy.
  8. 8. Remove the bowl from the heat again.
  9. 9. Whip the cream until stiff.
  10. 10. Stir the melted chocolate and egg yolk mixture well.
  11. 11. Place the bowl in a bath of cold water.
  12. 12. Continue beating the mixture in the cold water bath until it has cooled down.
  13. 13. Gently fold the whipped cream into the chocolate mixture.
  14. 14. Gently fold in the egg whites to keep the mixture airy.
  15. 15. Fill the mousse into small glasses.
  16. 16. Place the glasses in the refrigerator for at least 3 hours.
  17. 17. Wash the cherries thoroughly.
  18. 18. Remove the pits from the cherries.
  19. 19. Stir the starch with 1 to 2 tablespoons of cherry juice until smooth and free of lumps.
  20. 20. Bring the remaining cherry juice together with the cherries to a boil.
  21. 21. Stir the prepared starch into the boiling cherry mixture.
  22. 22. Cook the mixture for another 1 to 2 minutes.
  23. 23. Remove the bowl from the heat.
  24. 24. Let the cherry mixture cool down.
  25. 25. Distribute the cooled cherries over the mousse before serving.
  26. 26. Garnish the dessert with chocolate shavings.
  27. 27. Serve the mousse immediately.
