🍽️ Creamy Chocolate Mousse

Ingredients
- 150 g dark chocolate
- 150 g milk chocolate
- 1 cup strong espresso
- 5 eggs
- 3 tbsp sugar
- 125 g whipping cream
- 50 g sugar
- cocoa powder (for garnishing)
Instructions
- 1. Break the chocolate into small pieces and chop them roughly.
- 2. Place the chocolate pieces and the espresso in a heatproof bowl.
- 3. Fill a pot two-thirds full with water and heat it.
- 4. Place the bowl with the chocolate on the pot, ensuring it does not touch the water.
- 5. Melt the chocolate in the espresso while stirring constantly.
- 6. Separate the eggs and set the egg yolks aside.
- 7. Whisk the egg yolks with the sugar until creamy and frothy.
- 8. Whip the cream until stiff peaks form.
- 9. Whisk the egg whites with the remaining sugar to stiff peaks.
- 10. Let the chocolate mixture cool down briefly.
- 11. Stir the egg yolk cream into the cooled chocolate.
- 12. Gently fold the whipped cream into the chocolate mixture.
- 13. Gently fold the stiff egg whites into the mixture.
- 14. Fill the mousse into small glasses or molds.
- 15. Chill the mousse in the refrigerator for at least two hours.
