  3. 3. Fill a pot two-thirds full with water and heat it.
  4. 4. Place the bowl with the chocolate on the pot, ensuring it does not touch the water.
  5. 5. Melt the chocolate in the espresso while stirring constantly.
  6. 6. Separate the eggs and set the egg yolks aside.
  7. 7. Whisk the egg yolks with the sugar until creamy and frothy.
  8. 8. Whip the cream until stiff peaks form.
  9. 9. Whisk the egg whites with the remaining sugar to stiff peaks.
  10. 10. Let the chocolate mixture cool down briefly.
  11. 11. Stir the egg yolk cream into the cooled chocolate.
  12. 12. Gently fold the whipped cream into the chocolate mixture.
  13. 13. Gently fold the stiff egg whites into the mixture.
  14. 14. Fill the mousse into small glasses or molds.
  15. 15. Chill the mousse in the refrigerator for at least two hours.
